Baked Garlic Potato Wedges | Video
Swap the usual deep fried french fries with a less oily, baked garlic but spicy potato wedges. My go to easy carbs dish served with a hot and sweet dipping sauce. Nothing can beat that. Slight crunch on the outside is just how I like it. The best thing about this dish are the leftovers, recreated with the help of eggs to make “Chips -Mayai” for breakfast. Just thinking about it makes my mouth watery. In order to make this dish comes to life, all you need are a few readily available ingredients that is accessible to most people.

Making “Baked garlic potato wedges”
Prep time: 10 mins Bake time: 1 hour Total time: 1 hour 10 mins
Serves: 3 pax
- Potatoes – peeled, sliced in wedges
- 4 bunches of cilantro -chopped
- 4 bunches of spring onions – chopped
- 2 full garlic – sliced at the top
Spices, oils used:
- 1/2 teaspoon of cayenne chili powder
- 1 teaspoon of black pepper powder
- 1 teaspoon of salt
- 1 Tablespoon of vegetable cooking oil
- Baking tray
- Aluminium foil
- large mixing bowl
- wooden spoon
- sufuria /saucepan
- an Oven
Step 1: Season the wedges
With both the spices and the vegetable oil. Make sure they are coated well.
Step 2: Pre heat the oven to – 190 C for 10 mins.
Step 3: Prep the baking tray
First cut two small pieces of the aluminium foil, place the whole garlic pieces on each foil. Rub some oil on each garlic, and wrap the garlic. Place the wrapped garlic at any corner of the baking tray, add the seasoned potato wedges to the tray. Spread them out. Bake in the oven between 40 mins to 1 hour. NB: Every 20 mins, take the tray out, flip the wedges so they cook evenly and place them back in the oven.
Step 4: Saute the veggie mix.
In a sufuria/ Saucepan, saute the spring onions + cilantro and a dash of black pepper for 3 mins. I used only of the baked garlic. Once you remove it from the foil, it will be super fragrant and soft, so peeling it off will be easy. Mash with the back of a teaspoon and add it to the veggie mix. Allow it to cook for 1 more min to add that flavor. Switch off heat, and set it aside.
Step 5: Mix the veggie & baked wedges
In a large mixing bowl, combine the two until well coated.
Step 6: Serve while warm.
