A turnover is often eaten for either breakfast or dessert. This is a type of pastry made by placing a sweet or savory filling on a piece of dough “puff pastry or short crust pastry”, folding the dough over, sealing, and baking it.
When I was prepping this recipe, I knew the main focus will be on apple turnovers, but I wasn’t satisfied by them being just turnovers. I needed some sort of drama to accompany it. I turned over to my food dictionary which is basically Pinterest, and spent hours trying to incorporate some drama to this recipe, and there it was. My love for braiding bread and its recipes it just growing day by day. I get to learn a new trick and am excited to share some if not all of them in upcoming video recipes. When I saw this type of braiding I just knew this has got to be it, to give it a wow factor hence a long video of about 3 mins long, unlike the 1 min video y’all are used to.
Here’s what you’ll need:

Yields: 3 apple turnovers
Serves: 3 pax
- 3 square sheets of puff pastry
- 1 apple
- 2 Tablespoons of Kentaste coconut oil
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cardamoms
- 3 Tablespoons of castor sugar
- Extra flour – dusting
- An egg = egg wash
- Rolled oats = Optional
Important tools used:
- An oven
- A shallow baking tray
- a rolling pin
- small mixing bowls
- pastry brush
Step 1: Preheat the oven @200 C for 15 mins first.
Step 2: Prep the apple – Slicing into half, remove the seeds, peel it and diced it into small cubes. Add in the coconut oil + the ground spices mentioned + sugar. Mix everything together, and set it aside.
Step 3: Prep the puff pastry sheets – Take each sheet, dust it well with some flour to help it not stick, roll it out slightly bigger than its original size. Fold each piece into two equal halves, then quarters. Un-fold it and now you have 4 squares. On the top left square – cut strips going downwards. On the bottom left square – cut strips going from left to right. On one of the uncut squares, place some of the apple filling onto it. Brush some egg wash on all the 3 sides without the apple filling. Take the other uncut square and fold it over the filling firmly securing the edges to avoid any spillage while it bakes. With the help of the Video above start braiding. Repeat for the remaining 2 sheets of puff pastry.
Step 4: Garnish – First brush some egg wash on top of each braided pastry and garnish with some rolled oats. Feel free to use something else for the garnish.
Step 5: Bake @ 200 C for 20 mins
Step 6: Serve while still hot.
