I will teach you how to make an Apple Cinnamon Walnut muffins with cinnamon sugar sprinkle. These muffins are amazingly delicious and healthy too. They are moist and fluffy on the inside with soft chunks of apples, and crisp bits of toasted walnut. Bottom line these muffins are so YUM!!. This should be a perfect treat for your friends and family during brunch or even a baby shower.

Making “Apple Cinnamon Walnut Muffins”.

Prep time: 50 mins   Bake time: 35 mins   = 1 Hour 40 mins.

Yields: 24 muffins

MAIN INGREDIENTS:

A: Ingredients for Apple sauce.

  • 2 Apples – Peel, diced -small cubes.
  • 1 tsp of ground cinnamon
  • 1 -1/2 cups of water

B: Dry Ingredients.

  • 2 Cups of all purpose flour
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • 2 tsp of ground cinnamon
  • 1/2 tsp of ground cumin / OR Nutmeg
  • 1/4 tsp of ground ginger

C: Wet Ingredients.

  • 6 Tsp of melted unsalted butter
  • 1/2 cup of honey
  • 1/2 cup of brown sugar
  • 2 large eggs
  • vanilla extract
  • 1 cup of whole milk /OR unsweetened almond milk /OR soy milk

D: Extra ingredients.

  • 1 extra apple
  • 1 cup of walnuts – pan toast them.
  • 1 Tsp of sugar
  • 1 tsp of cinnamon

E: Tools to use.

  • Oven
  • Electric Hand mixer
  • Ice cream scoop
  • Non-Stick pan
  • Sauce pan
  • Chopping board
  • Knife
  • Potato peeler
  • Parchment paper {Wax paper}
  • Muffin tin

 

INSTRUCTIONS:

  1. Pre -Heat your oven to 190 degrees C. Starting with the apple sauce. On a sauce pan, place the diced apples + cinnamon + water and bring it to a simmer on medium heat -while covered, till all soft or mushy for about 20 mins. Place it into a blender or food processor, pulse it- till smoothly blended. Set it in the fridge to cool.

2. Mix all the dry ingredients together. Set aside.

3. Take another separate bowl- dish for the wet ingredients. Start by melting a 1/4 stick of un-salted butter , place the sugar + honey together. With the help of an electric hand mixer, cream it till all is combined. Wow!! it smells so good. Gradually, crack each egg separately in a small dish – to avoid adding in egg shells – toss it in the sugar mix – Electric hand mix{E.H.M} it, repeat with the other egg. Once done, add in the Vanilla and Milk, E.H.M it. Add in your apple sauce and mix it. < How to use the apple sauce:- Eat it as a side dish, have it in pork/Meat dishes or use it for baking – like now!!>

4. Add in all the mixed dry ingredients into the wet ingredients and E.H.M it, first using slow speed to high speed or otherwise you get a “flour facial -poof”!!

5. We are now going to work on the texture. Take another apple, peel + cut into small cubes and then toast the walnuts. Walnuts are BLOODY EXPENSIVE”!! -“No kidding”. I used the same pan I melted butter with to toast the walnuts.” Add in the diced apples into the batter, fold them together. Once the walnuts are toasted, roughly chop them up into little chunks, 1/4 of the walnuts -set them aside – we will use then for toppings -add the rest into the batter mix -Fold.

6. Now I need you to be creative -D.I.Y muffin liners using wax paper. Take a wax paper, 4 by 4 inches cut a size-able square. Place the squared wax paper into the muffin tin cup, Scoop the batter using an ice cream scoop, pour the batter into the muffin liner till 3/4 full. Top it with the toasted chopped walnuts + cinnamon sugar. Repeat the steps for the remaining muffin cups. Bake it in the oven for 35 to 40 mins.

After 35 to 40 mins  of baking.

Final outcome. Golden at the top and they smell really good. Let them cool on the rack for 15 mins.
