A Crepe {Pronounced as K.r.e.p} is a french origin thin pancake that can be served best either as a savory or sweet dish with a variety of different fillings.
I decided to prepare a sweet type of crepe, using two of my favorite fillings – that is: apple pie and the caramelized banana. I may have said this like a million times, but am not so much of a sweet tooth kinda girl, but these crepes made me go weak to my knees. They are so delicious, the aroma makes my taste buds fire crack with drool, and lets not forget, they look good too.
Let’s go over the ingredients.
Making ” Apple pie & Caramelized banana Crepes“.
Prep time: 10 mins Cook time: 35 mins = 45 mins
MAIN INGREDIENTS:
Dry:
- 1 cup of all purpose flour
- 2 Tablespoons of brown sugar
- 1/4 teaspoon of salt
Wet:
- 1 cup of whole milk
- 3 eggs
- 1 teaspoon of vanilla extract
- 2 Tablespoons of melted un salted butter @ room temp.
Tools:
- Non stick pan
- Electric hand mixer OR a blender
- spatulas
- Ice cream scoop – OPTIONAL
Making the fillings:
- 2 bananas -sliced
- 2 brae-bum apples
- 4 Tablespoons of brown sugar
- 2 Tablespoon of un salted butter
- 1 Tablespoon of vanilla extract
- 1 Tablespoon of cinnamon
- Chocolate syrup – OPTIONAL
- Tangerine -OPTIONAL
INSTRUCTIONS:
- In a large bowl, sift the dry ingredients together, mix them together and set it aside. In a another bowl, electric hand mix the wet ingredients together. Gradually add the dry ingredients to the wet while electrically hand mixing until you get a smooth but light consistency to the batter.
- Into another bowl, sift the batter to avoid getting lumps. You don’t need lumps in your crepes. OPTIONAL – You can decide to use a small measuring cup, or an ice cream scoop to scoop up the light batter to the pan.
3. On medium heat, on a non stick pan, take a small piece of butter – allow it to fully melt once the pan is quite hot. Lift the pan up and tilt it in a slanting position, add 2 tablespoon of the batter as you rotate it in a circular motion for the batter to form a circle. Place the pan back on the stove and let it cook till the side turn brown for about 30 secs to 1 min.
4. Once the top part of the crepe is dry, flip to the other side to cook for 30 secs, then repeat the steps till you finish cooking the crepes.
Making the fillings:
a) Caramelized Banana filling.
- Melt the butter on a non stick pan, add 2 Tablespoons of sugar, mix everything together. Add in the bananas and combine let it cook till golden brown, as you keep tossing and turning them.
b) Apple pie filling.
- Melt the butter on a non stick pan, add 2 Tablespoons of sugar, mix everything together. Add in the diced apples, sprinkle 1/2 teaspoon of cinnamon, mix everything add a 1/4 cup of water, cover to cook for 5 mins till tender and soft.
