What’s the first thing you think about when you hear the word “Granola?”  I would definitely go with – American, expensive, healthy, vegan, chewy, homemade, crunchy, you know – just to mention a few.

Granola is a breakfast and snack food consisting of rolled oats, nuts, honey or other sweeteners such as brown sugar, and sometimes puffed rice, that is usually baked until it is crisp, toasted and golden brown.

A healthier breakfast is something that we could all committee too. I can bet on my favorite lipstick” that most of us either reminded ourselves as a resolution that we needed to eat a more healthier diet or rather try on a healthy lifestyle, and lifestyle always starts with a healthy meal. Don’t you agree?? Trust me when I say, the kids will LOVE this recipe, and you’ll never think about buying the store bought granola anything ever again. Remember, there is a tone of recipes out there, very simple to make, and most of the key ingredients used in this recipe are courtesy of Healthy U store.

Making “Baked granola crumble bites

Prep time: 15 mins   Bake time: 30 mins  Cooling time: 1 hour

Total time: 1 hour 45 mins

MAIN INGREDIENTS:

Dry

  • 2 -1/2 cups of rolled oats
  • 1/2 cup of desiccated unsweetened shredded coconut
  • 1/4 cup of cranberry crunch muesli
  • 1/4 cup of dried pineapples – diced
  • 1/4 cup of toasted almonds – roughly chopped
  • 1/2 cup of raisins
  • 1/4 cup of dark chocolate chips -roughly chopped

Wet:

  • 1 teaspoon of vanilla extract
  • 1/2 cup of vegetable cooking oil -sunflower
  • 1/2 cup of honey

Spices:

  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of  ground cinnamon
  • 1/4 teaspoon of ground cardamom
  • 1/2 teaspoon of salt

Important tools used:

  • an oven
  • a jug
  • Mixing bowls
  • Spatula
  • Wax paper
  • Casserole dish/baking tin
  • a sharp knife

INSTRUCTIONS:

Prepping the baking dish /casserole.

Preheat the oven to 180 C. Cut two sheets of wax paper, one sheep place it vertically, and the other horizontally to the pan. Apply some oil to the wax paper and set it aside.

Prepping the dry & Wet ingredients:

In a large bowl, mix all the dry + extras together.  Using a jug, add the oil + honey + vanilla = mix everything together. Pour the wet to the dry. Using your spatula, mix everything together will well combined.

Bake time:

Pour the sticky mixture to your aligned pan, using either your palm or a flat-bottomed cup, flatten the mixture until the corners of the pan to help in cooking evenly. Bake in the oven for 30 mins.

Cool time:

Once baked, allow it to cool for 1 hour – un-bothered or interrupted, and later you can disassemble it or cut into it to form granola bars.

Serve:

This is basically the fun part: These bites can be served in smoothie bowls, yogurt, cereals or eaten on its own as a delicious healthy snack.

This shall be my go-to snack whenever am on a hunt for a craving. Its very chewy, mildly sweet, super healthy from all the dried fruits, nuts, rich in fiber from the rolled oats, I mean, what more do we need??
