How do you like eggs? Is it, well done, rare or medium rare?
There is nothing I enjoy more than my eggs cooked in a sunny side up manner. I don’t know about you or how you like your eggs but, when it comes to a well seasoned under cooked slightly runny egg yolk when cut in the middle with a well done and set egg white, count me in. I cannot remember the last time I had an egg dish with a well cooked finish to it. A medium rare sunny side up is perfect for me.
On this recipe I’ll show you how I like my eggs done.

Yields: 1 serving
Here’s what you’ll need:
Main Ingredients:
- 1 red onion – thinly sliced
- 2 medium tomatoes – diced
- 2 cups of spinach – chopped
- 3 cloves of garlic – grated
- 1 bunch of cilantro leaves – chopped
- 2 eggs – at room temp
- 1/4 cup of whole milk
- 1/4 cup of cheddar cheese – grated
- 1 teaspoon of pilau masala
- 1/2 teaspoon of cayenne chili powder
- 1/2 teaspoon of cardamom
*Important tools required*
- A shallow dish/plate {Oven safe}
- an oven
- a spoon
Instructions:
Step 1:Preheat oven @ 190C for 10 mins first
Step 2: Cook the veggies:
In a saucepan, add some cooking oil and saute the onions until they are slightly golden brown. This should take about 3 mins. Add in the garlic and let it get a little bit fragrant. Next goes in the tomatoes, cook until they are slightly soft. Next is the spinach then cilantro.
Step 3: Plait the plate
Take your oven safe plate and assemble the cooked vegetables. Try as much as possible not to add the soup /the liquid to the plate. Using the back of a spoon, press down the veggies on your plate to make a dented bed for the eggs to sit on. Add your eggs on each of the bed.
Step 4: Bake for 17 mins.
Step 5: Serve and enjoy.
