I recently had an Instagram brownie bake sale that was such a major hit and honestly I didn’t expect such a turn out, but I did appreciate receiving your money and satisfying your needs. However, I was left with a couple of pieces that didn’t get a home, so I started looking for ways to incorporate it in a different way and make it pop.

What I’ve used in today’s recipes is what I had at hand, but the world should be your oyster. Make it your own.

Here is how I brought it to life:

Making ” Berry Brownie Peanut butter cheesecake parfait”

Prep time: 10 mins

Serves: 2 people

Main Ingredients:


  • 1 cup – thawed blueberries
  • 2 cups – thawed raspberries
  • 2 teaspoons of white sugar

*Important tools used*

  • Measuring spoon
  • measuring cup
  • small mixing bowl


  • Crushed cookies of your choice = OPTIONAL STEP

*Left over Brownies*

  • 1 piece

*Peanut butter cream cheese filling*

  • 1 Tablespoon of NutGold peanut butter
  • 3 Tablespoons of cream cheese – at room temp
  • 2 Tablespoons of icing sugar
  • 1/4 cup of milk

*Important tools used*

  • Measuring spoon
  • Measuring cup
  • Shallow dinner plate
  • Rubber spatula
  • Star nozzle tip
  • Piping bag

*Whiskey / wine glasses*

  • 2 glasses


Step 1: Prep the berries – In a bowl, add the two types of berries + sugar = mix them well together. Set them aside until ready to use.

Step 2: Prep the cream cheese mix – In a shallow dinner plate, add the cream cheese and cream itself together using a rubber spatula to just warm it up before adding the other ingredients. Next is the icing sugar – Mix them together to foam a thicker creamy texture. NB: Feel free to adjust to the sweetness you prefer. Mildly sweet is how I like mine. Next is the milk, add it gradually as you fold it in. The consistency to go for is like that of butter cream, thick but spreadable. Once done, place it in a piping bag fitted with a star nozzle tip. Set it aside.

Step 3: Prep the left over brownies and cookies – Cut them into small size-able bite size pieces. Set aside. Crush some of your favorite cookies to a crumble like consistency.

Step 4: Assemble time: – In whichever order, layer them up to your preference.

Step 5: Refrigerate and serve, or just serve immediately.

Each scoop looks heavenly – This combination is slightly tart, just how I love it. Remember to adjust the sugar or sweetener quantity to your liking.
