I’m always fascinated with simple dishes. Some of y’all think I am always energetic when it comes to prepping food, fact”, but lets’ not forget that I am human too. I get tired once in a while, and finding a simple recipe is always like a fresh cup of coffee in the morning. Still in our backyards {comfort of our homes} most of us always have these ingredients in our houses: – sausages, sliced loaf of bread, bacon and eggs, I mean, that is what most us call a heavy breakfast. Don’t get me wrong, these items are great when enjoyed individually, but have y’all ever thought of combining all of them together – yeah just like a sandwich?? Well, today…I did that for all of us. Let’s get to it.

Burrito “pronounced as Bo-ri-to” -is a Mexican soft, warm tortilla {the L’s are silent} wrapped to contain a number of juicy fillings including rice, veggies, beans and chicken, beef or pork, into a closed-ended cylinder.

Making “Breakfast Bread Burrito

Prep time: 5 mins  Cook time: 10 mins   Total time: 15 mins

Serves = 3 pax

MAIN INGREDIENTS:

  • 12 slices of white bread
  • 4 to 6 cooked sausages
  • 6 slices of cooked bacon
  • 4 scrambled eggs
  • Ketchup
  • Mayo mix “Mayonnaise + chili sauce + lime juice + cayenne chili flakes- {Optional}
  • Vegetable oil

Important tools:

  • Parchment paper OR cling foil
  • Rolling pin
  • Frying pan
  • Heat proof spatula
  • Knife

INSTRUCTIONS:

Trim the four sides of the edges of the sliced bread. Place a parchment paper at the bottom of the sliced bread. Roll them flat completely, so that this will help in rolling them easily.

Drizzle both the ketchup and the mayo mix on the rolled bread slices. Smear them all over the bread as shown below. Starting with the scrambled eggs -cooked bacon – sausages, layer them up /or to your preference. Drizzle more mayo mix, then with the help of the parchment paper, roll the bread firm and tight to look like a swiss roll or a cylinder. I cut my roll into 3 pieces.

Heat your frying pan with at least a tablespoon of vegetable cooking oil on medium low heat. Place the sliced piece of the roll, one at a time to cook of each side -even the sides turn golden brown. Once all cooked through, serve with either a hot or a cold beverage.

Yep!! It’s a simple as that.
