It’s Sunday Morning, you get to do either of these things- relax, cuddle, netflix, sleep in or tweet about NASA and Jubilee. Would you rather be making babies, buttermilk blueberry pancakes from scratch, or have amazing sex? Okay, probably that was a stupid question. I know you would rather pick the grand slam for choice one or three. I would too. 🙂 Allow me to rephrase that question, would you rather make fluffy buttermilk blueberry pancakes from scratch or have the normal dry – crunchy toast?? Well, I thought so, blueberry it is. Let’s get to it.

Making blueberry pancakes, is as easy as – “opening a box”, literary.

How to make “Fluffy buttermilk blueberry Pancakes

Prep time: 5 min  Cook time: 20 mins  Total time: 25 mins

Serves: 3 persons

Yields: 7 pancakes.


  • 2 cups of fresh blueberries
  • 2 cups of all purpose flour
  • 3 tea spoons of baking powder
  • 2 Tablespoons of extra flour
  • 1/2 cup of sugar
  • 1/2 tea spoon of salt
  • 2 Tablespoons of vegetable oil -liquid
  • Extra vegetable cooking oil
  • 2 tea spoons of vanilla extract
  • 1 egg – at room temp
  • 1 cup of buttermilk {1 cup of whole milk + 1 -1/2 tsp of white vinegar {or fresh lemon juice}
  • Homemade Blueberry jam {OPTIONAL} – Garnish
  • Sliced banana {OPTIONAL} – Garnish
  • Extra fresh blueberries {OPTIONAL} – Garnish


  1. In a large bowl, mix the dry ingredients together. In a small bowl – mix the wet ingredients together. Add the wet to the dry. Using a spatula, Using the folding method, mix the wet and dry -just until the flour has disappeared. Add the extra flour to the blueberries – to coat them. NB: This helps the blueberries not to sink at the bottom when mixed with the batter. Add in the floured blueberries to the batter, and lightly fold them in without smashing them. DON’T OVER MIX THE BATTER!!!

2. On medium low heat, heat a pan with little oil. Using a measuring cup, scoop the batter and place it on the pan. Let it cook for 2 mins on each side before flipping it. Repeat the cooking steps till all cooked.

3. Serve while still warm with dripping blueberry Jam and sliced bananas or any other fruit. NB: Since the dish is a bit sweet, I served it with a tall glass of warm milk.
