Didn’t we just talk about prepping easy dishes in my previous post? Well, you guys asked for it.

I am at it again. I’m trying to balance all this out so every foodie out there gets something they can definitely work with. This is just a guide. I am a no Michelin pro chef – AS YET, but I believe with effort and practice after practice, I’ll be better than when I started this blog in 2015. This post is going to be a very different one from what I usually fill you in on, in terms of having multiple recipes combined into one post. Yup!! Christmas has come super early for both you and me.

This is the high definition of what “Killing 4 birds with one stone” actually means.” Drum rolls, please!!!

Making “Chicken nuggets /Poppers – 4 different ways

Prep time: 15 mins  Cook time: 45 mins  Total time: 1 hour

Serves: 4 pax

MAIN INGREDIENTS:

  • 3 Skinless & boneless chicken breasts – cut into cubes
  • 4 eggs
  • 1 -1/2 cups of desiccated shredded coconut
  • 1 -1/2 cups of crushed Weetabix
  • 2 cups of all-purpose flour
  • 2 Tablespoons of milk
  • Vegetable oil for deep frying

SPICES:

  • 2 teaspoons of salt
  • 2 teaspoons of black pepper
  • 2 teaspoons of paprika
  • 2 teaspoons of garlic powder
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of cayenne chili
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of ginger

 

INSTRUCTIONS:

I mixed all the spices into one bowl. Add all the spices to the chicken pieces, by getting your hands dirty and rubbing the spices with the chicken -If you’re going to use a spoon “GET YOUR HEAD IN THE GAME” takes a breath and #Sigh. In a separate bowl, mix together – crushed Weetabix + shredded coconut = This is to act in place of breadcrumbs. NB: Feel free to use bread crumbs, but I can attest to this first hand and hands down for the crunchiness yet flavorful vibe of the coconut /Weetabix mix. 

In another bowl, beat the eggs + milk + season with salt together. Set aside. THIS IS WHERE IT GETS REALLY MESSY & YOUR BOTH HANDS GET BUSY. One by one, deep the seasoned chicken pieces into the egg wash mix > back to the flour >back to the egg wash > finally coated with the coconut Weetabix mix. Repeat those steps till all is coated.

Over medium-high heat, add some cooking oil to a frying pan and allow it to heat up for 2 mins. Start frying the coated nuggets till golden brown. Have a large bowl with paper towels ready, to soak up any excess oil. Once all deep fried, drain out the used oil into a different dish. Using the same frying pan -even without washing  – prep it for the 4 different recipes.

 

Recipe 1:

BBQ Chicken nuggets

MAIN INGREDIENTS:

  • 8 to 20 pieces of fried chicken nuggets
  • 1/2 cup of choma sauce / BBQ sauce
  • 1 Tablespoon of butter

Heat the same frying pan with butter. Once melted, pour in the choma sauce – mix them together. Let it come to a bubbling simmer until it thickens up. Add in the chicken, toss them around till well coated – Serve.

 

Recipe 2:

Buffalo Chicken nuggets

MAIN INGREDIENTS:

  • 8 to 10 pieces of fried chicken nuggets
  • 1/2 cup of hot chili sauce
  • 1 Tablespoon of butter

Heat the same frying pan with butter. Once melted, pour in the hot chili sauce – mix them together. Let it come to a bubbling simmer until it thickens up. Add in the chicken, toss them around till well coated – Serve.

 

Recipe 3:

Garlic Cilantro Chicken nuggets

MAIN INGREDIENTS:

  • 8 to 10 pieces of fried chicken nuggets
  • 4 cloves of finely minced garlic
  • a pinch of salt
  • 2 bunches of finely chopped cilantro leaves
  • 1 Tablespoon of butter

Heat the same frying pan with butter. Once melted, add in the minced garlic, let them heat till slightly browned Add in the chopped cilantro and mix together. Add in the chicken, toss them around till well coated – Serve.

This has got to be my favorite recipe of the 4. Garlic is BAE -Yass!!

 

Recipe 4:

Honey glazed Chicken nuggets

MAIN INGREDIENTS:

  • 8 to 10 pieces of fried chicken nuggets
  • 1/4 cup of honey
  • 2 Tablespoons of Paprika
  • 2 Tablespoons of water
  • 2 Tablespoons of ketchup
  • 2 Tablespoons of chili sauce

First add the water, till bubbly > add in the honey mix them together. Once it starts to thicken, add the ketchup + chili sauce + ground paprika mix them together and leave them to thicken. Add in the chicken, toss them around till well coated – Serve.

Final outcome:

From left: Buffalo Chicken nuggets + BBQ Chicken nuggets + Garlic Cilantro & Honey glazed Chicken nuggets.
