Ever had the feeling that you don’t want to get home and cook the same old healthy meals, that you NEED something fancy, easy and different but super healthy?? Well…. that has been my life recently. I need to change up my gear and get my creative yet interesting mojo back. We not only need to spice up our sex lives, but also our skills in the kitchen. Y’all know am hella” right on that statement.

I’ma help you get your kitchen skill back on track.

FYI- “Fritters, basically means – anything grated or shredded into tiny pieces, especially with a whole lot of fried foods.”

How to make: – Chili cheese -potato fritter pancakes.

*Main ingredients*

-1 big peeled potato

-1/2 cup of cheddar cheese {can use any other}

– 1 peeled carrot

-1/2 cup of purpose flour

– 1/2 cup of milk

– 3 eggs

– 1/2 tsp of paprika

– 1 tablespoon of chili flakes {You can use 1 chopped red chili}

– 1/2 tsp of black pepper

– 1/2 tablespoon of salt

– grater

1. Pour the flour into your container or bowl, and make a well in the middle using your hands.P1090501

2. Beat the eggs first in its own bowl, then add in the milk to the beaten eggs.

3. Mix the milk and eggs together. It would be much easier/quick if you had a hand mixer, if not…. Don’t worry. mix using a fork. Pour the egg -milk mix right in the middle of the flour and mix well to make batter mix. {Similar to that of pancakes} Make it smooth.

4. Dice the potato in half and grate one piece at a time. When all done, you will notice that the grated potato is soggy. Squeeze out all the juice out of it into a different  bowl. {We aint going to use that water}.

5. Grate the carrots and DON’T pour out the carrot juice, coz its got lots of nutrients. Add in the potato shreds in the batter mix, then in with the grated carrots and the cheese.

6. Mix all the combination really well. Medium heat your frying pan with 2 tablespoon of vegetable oil.

7. Add in the powdered spices and mix again.

8. Depending on the sizes you want, {Small, medium or large} scoop in the batter mixture to the pan, and DON’T SPREAD IT”. They will come out fluffy. TRUST ME!!.

Final Outcome:

The best part about them, is they aren’t as oily as they may seem. Yummmm!!

This was dinner last night, top it up with barbecue sauce.P1090533P1090534P1090550

For Breakfast.

Woke up this morning, with a craving of last night’s dinner. To spice things up, I had left over chilled melted chocolate from my previous article on Oreos you can read it HERE. I first melted the chocolate, then just applied it on the potato fritter pancakes, then served with coffee.

Talk about a serious healthy filling. Yumm.
