There is a competition via pink lady apples Kenya’s – Instagram page, that I have been dying to participate in before time runs out since their deadline is on 20th October. Basically the competition is in partnership with Kaluhi’s Kitchen and yummy magazine Africa. The purpose of this competition is to appreciate and reward the growing food photography culture here in Kenya, and I think that it is such a great gesture while making it fun for us foodies /bloggers. The recipe has to involve apples as the main ingredient plus while taking the shots, to make sure the apples are well captured. Make sure tag them using the #PinkLadyPicsKE and stand a chance to an edible hamper worth Ksh 5,000. Apparently the first winner for the month will be announced on the deadline which is on 20th October 2019 as mentioned above. I thought this simple chocolate turtle apple slice recipe should do the trick.
Here’s what you’ll need:
Prep time: 15 mins Chill time: 10 mins Total time: 25 mins
Yields : 8 slices
Main Ingredients:
- 3 medium sized pink lady apples
- Smooth nut gold peanut butter
- Dairy-Land White compound chocolate
- Dairy-Land Dark compound chocolate
- Crushed mixed nuts ( Pistachio + cashews)
Important tools used:
- Aluminium foil
- Serving plates
- popsicle sticks
- Mixing bowls
- Spoons
- Knife
- An Ice box – Refrigerator
- Heat – double boiler
- Piping bags
Instructions:
Step 1: Separately melting the peanut butter + white + dark chocolate using the double boiler. I find this method much easier than using a microwave. This should take about 5 to 10 mins. As they slightly cool, prep the apples.
Step 2: Prep the apple slices – First wash the apples well and dry them out. Take your sharp knife and slices them into round circles.
Step 3: Coating the apple slices with chocolate – I’m using the dark chocolate as the first coating, each slice on both sides and let the excess drip off completely.
Step 4: 1st chill – first place the chocolate dipped apple slices on a tray lined with aluminium foil. The foil will help peel off easily once the chocolate has firmed up. Chill for 5 mins.
Step 5: Second + third coating – Once the first coating with the dark chocolate has firmed up, drizzle the white chocolate + garnish with crushed nuts + peanut butter.
Step 6: 2nd chill and serve – Chill them for another 5 mins, then serve right after.
