These bites are gluten free, dairy free, no bake and vegan, so if you are on a healthier journey energy balls are the right snacks to kick start your day while cutting out your sugar cravings.
You can satisfy your sweet tooth in a healthy manner with just dates, coconut, chia and sesame seeds, Lakanto, vanilla bean paste cacao. Each bite-sized ball is perfect for an afternoon snack or as a nutritious dessert!
Today, I’m sharing this master recipe for Energy Balls, and please feel free to substitute with any other ingredient you may have at hand. Make sure not to leave out LAKANTO. It can be added into the mixture or just as a garnish.

Here’s what you’ll need:

- 1 cup of unsweetened desiccated coconut
- 1 cup of dates
- 2 Tablespoons of Lakanto golden
- 1 Tablespoon of chia seeds
- 1 Tablespoon of sesame seeds
- 1 teaspoon of Black Juice Vanilla bean paste – Baker’s edition
- 1/4 teaspoon of salt
Important tools used:
- Food processor
- Measuring spoons
- Rubber spatula
Step 1: Prep the dates – by “pitting” them – this means, by the use of your fingers, divide each piece of the dates through the center and remove the oblong shaped seed, then throw it away. The fleshy part of the dates place them in a deep bowl and add warm water until all the dates are submerged. The warm water is to help the dates become softer for easier binding and to act as glue to the rest of the other ingredients. Set them aside for 5 mins, then drain the water.
Step 2: Mix the part of the dry ingredients into a food processor – By adding in the coconut, salt, chia and sesame seeds. Close the lid of the food processor and pulse everything together for 30 seconds.
Step 3: Add the wet to the dry ingredients -ie: Black Juice Vanilla bean paste baker’s edition and the soft pitted dates to the dry mixture, pulse until the mixture is almost combined. Last but not least, add the dark cocoa powder, pulse again to mix everything well but avoid over mixing. Check by the feel of the mixture, if its too sticky, you can add a few tablespoons of un-sweetened coconut to get it to the right consistency.
Step 4: Shape them – with the help of your palms, pinch out the mixture and roll them into small or large balls, then set them a side.
Step 5: Garnish – Add Lakanto in a shallow dish / plate. Roll each energy ball into the dish with Lakanto and coat it lightly. Serve when ready.
How to store them:
- Place them in an air tight container and place then in the fridge for up to 2 weeks.
- They are also freeze -able friendly. Can either be placed in a zip-lock bag or air tight container
