It took me a couple of hours to come up with this recipe. I am glad I settled with the third edit. The final result came out perfectly, well cooked and super super delicious. This coconut oat banana bread is rich in flavor and fiber. I would say its about 95% vegan, since I know for sure most of you guys would love this.
Prep time: 10 mins Bake time: 55 mins Cool time: 30 mins
Total time: 1 hour 58 mins
Yields: 1 loaf
Here’s what you’ll need:
- 1 cup of all-purpose flour
- 3/4 cup of desiccated shredded coconut
- 1 cup of old fashion oats
- 3/4 cup of sugar
- 2 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1 egg
- 4 medium ripe bananas – mashed
- 1 teaspoon of vanilla extract
- 1/2 cup of vegetable cooking oil
- 1 tsp of butter – coating pan
- mixing bowls
- measuring cups/spoons
- wax paper
- loaf pan
Step 1: Preheat oven to 180 C /350 F.
Step 2: Prep the dry & wet ingredients.
In a large bowl, mix all the dry ingredients together. In a smaller bowl, mix all the wet ingredients together. Add the wet to the dry and fold them together using a spatula be sure not to over-mix. Over-mixing will activate the gluten in the flour and leave you with a tough product. We don’t want that! It’s okay if there are a couple small dry spots left in the batter.
Step 3: Prep the loaf pan
Apply some butter/margarine to the bottom of the pan. Align it with some wax paper that covers up to the sides. Add the batter to the pan and tap it lightly on the counter top to avoid any spaces.
Step 4: Bake = 55 mins
Step 5: Cooling = 30 mins
The first 15 mins on a wire rack but still in the pan. Remove the bread from the pan – peel off the wax paper and let it cool for another 15 mins.
Step 6: Slice, serve and enjoy.
