I have been away on a team building retreat with my office family, that’s my reason of being MIA” from posting on this platform. We were privileged enough to stay at our exquisite 3 star hotel –Elementaita Country Lodge {One of the chain of Seasons group of hotels}, it was a fully paid trip, team building training thanks to the Stan Consultancy Group – we all needed the break and it was worth while. It’s always good to try new things and having a team building for the first time in history – let’s just say “Christmas came early, though I feel like I was hit by a plane – tells me how un-fit I am.

Since I love my food, I was keeping my eye out looking for an inspiration and an idea of spice up my foods or drinks once I get back. On the second day I noticed they had a huge variety of dishes especially for the breakfast buffet {my favorite meal for the day}- from the normal drinks of freshly squeezed juices, porridge, tea /coffee. For the food they served: cereals, eggs, {omelette, and boiled}, bacon {LIFE starts with bacon}, creamy baked beans, sausages, pancakes, sweet potatoes, and STEAM BROCCOLI. I have never seen broccoli on a breakfast buffet ever, and that Jazzed me. The thing is, 75% of the men were having the broccoli  probably to get rid of the hang over which was a good show.

During lunch of the second day, probably this is a motto or a routine for hotels to serve soup as a starter of course as a three to five course meal depending on the hotels, but my motto it “If the soup aint creamy, move directly to the  main dish. This time I sampled the creamy mushroom soup, which I hadn’t had in years, and my taste buds were excited. Once I had my first scoop of the creamy soup, yumm was an understatement. There were some chunks of mushroom in it making in chewing just right, the seasoning was on point, thick, and creamy. I had two other bowls after that, ….Mind-blown.

Anyway, I got what I wanted, interesting recipes to spice up “Tastie Dine”. Making “Creamy Mushroom Soup”.

Yields /Serves = 1 Bowl

Prep time: 5 mins,  Cook time: 25 mins  Total time: 30 mins

*Main Ingredients*

-1 cup of cleaned, sliced button mushrooms

-2 medium diced onions,

-5 grated cloves of garlic

-2 Tablespoons of all purpose floor

-1 stick of unsalted butter

-1/4 cup of thick cooking cream

Seasoning: Black pepper, salt, paprika, soy sauce

INSTRUCTIONS:

  1. On medium  high heat, using a non-sticking pan, add in a stick of butter. Once its melted, saute the onions and garlic until soft for 2 mins.

2. Add in the sliced button mushrooms fry for 10-15 mins, till its golden brown and dry.

3. Add the seasoning and mix well. Fry for another -3 mins. Sprinkle in a dash of soy sauce, mix let it sit for 2 mins.

4. First Scoop 2 table spoons of the dry fried mushroom  {set aside – Use it for garnishing }. Add in chicken/beef broth { or water}, cover and let it simmer for 5 mins. Add in the 2 tablespoons of flour and cream at the same time and mix continuously till all cream is combined.

5. Make sure the consistency is thick enough for your preference. I LOVE mine thick and creamy. Give it another 5 mins to simmer as you mix continuously.

6. Switch of the heat, Let it cool for 5 mins, before blending it. NB: you can have the soup as seen in the above pic, but I love my soup thick and smooth.

Place the mixture into a blender, and on high speed, blend everything until its smooth.

Serve while still hot.

I can definitely have creamy soup any time of the day, on a hot or cold day- its my go to starter. I honestly don’t know why it took me so long to make this because this is one of the easiest soups I have ever made. Plus, it tastes a million times better than the canned stuff!
