Having the balance of a mildly sweet and a super spicy meal is one of the best ways to tickle your palate, if I do say so myself. This particular dish of a double fry honey chili potato is such an adult crowd please-er. Not so much consumer-able to young children since its quite over the top, unless you emit the spices completely. Trust, its’ not fun without all the spices used up here, but we have to be cautious of course if the kids are involved.

Here is how I prepped this meal.

Prep time: 10 mins  1st fry time: 20 mins  2nd fry time: 20 mins

sauce prep time: 15 mins  Total time:  1 hour 5 mins

Serves: 2 pax

Main Ingredients:

*1st Fry mixture*

  • 8 large potatoes – peeled, cut into finger shapes, washed & drained.
  • 3 Tablespoons of all-purpose flour
  • 3 Tablespoons of corn flour
  • 1 Tablespoon of grated garlic
  • 1 Tablespoon of ground cayenne chili powder
  • 2 teaspoons of salt
  • 2 cups of vegetable cooking oil

*2nd Fry Mixture*

  • 3 Tablespoons of all-purpose flour
  • 3 Tablespoons of corn flour
  • 1 teaspoon of black pepper
  • 3 Tablespoons of water

*For the sauce*

  • 2 Tablespoons of vegetable cooking oil
  • 1 Tablespoon of grated garlic
  • 1 teaspoon of chili flakes
  • 3 Tablespoons of sesame seeds
  • 2 teaspoons of dark soy sauce
  • 2 Tablespoons of garlic tomato sauce
  • 2 Tablespoons of BBQ sauce
  • 1 -1/2 Tablespoons of honey
  • 1/4 cup water + 1 Tablespoon of corn flour = Slurry
  • Chopped cilantro – Garnish

*Important tools used*

  • Frying pan
  • sauce pan
  • wooden spoon
  • measuring cups/spoons
  • heat proof spatula
  • serviettes


Step 1: Prep the mixture for the 1st fry – In a large mixing bowl, add all the 1st fry ingredients to the potatoes. Mix them very well. If there will be any residue of the paste, don’t pour it out. We will need it for the 2nd fry mixture. Fry the well coated potatoes in a preheated frying pan with vegetable oil. NB: While adding the potatoes into the frying pan with oil, try separating the potatoes before they are in the oil. We don’t want them clamping up together. DON’T COOK THEM ALL THROUGH. Place them cooked batch on a tray/plate lined with serviettes, to drain any excess oils. Don’t yet turn off the heat for the oil.

Step 2: Make a paste for the 2nd fry – Add all the 2nd fry ingredients in the same bowl used in step 1 with any paste residue that has lots of flavor. Mix it well to form a paste. Add in the semi- cooked fries into the paste – just as shown in the video above. Mix well. 2nd fry them in the preheat oil used in step 1. Try separating them just before they hit the oil. The cooked batched, place them on a lined tray /plate with serviettes.

Step 3: Prep the sauce – In a clean sauce pan, over medium heat, add some cooking oil. Then sesame seeds, toast them for 30 secs. Add in the grated garlic and cook until its fragrant enough. The rest of the ingredients follow ( especially the sauces) + the honey. Leave it to bubble and thicken just as shown in the video above. Turn off the heat, and while its still hot, add in the fully cooked potatoes to the sauce and coat it well.

Step 4: Garnish with cilantro and serve.
