Let’s talk about “Quiche“.It’s best pronounced as “Kish”. Wonder no more, since its a savory, open-faced pastry crust -basically made of sandwich bread, with a filling of savory custard with cheese- Option choice” meat, seafood, and/or vegetables. It is part of French cuisine but is also popular in other countries, particularly as party food which is basically a very tasty snack. {Depending on the ingredients you use}.

I will show you one of the many versions of this recipe, and just how savory I need it to be. I decided to go with a more healthier version, best for a light breakfast meal/snack, now imagine having it with a tall -warm glass of milk {Am such a Kalenjin}

Making “Easy Quiche Toast Cups”

Prep time: 10 mins   Cook /Bake: 15 mins   = 25 mins

Serves: 2 pax

MAIN INGREDIENTS:

  • 6 Slices of white sandwich bread
  • Bacon- chopped up
  • 3 eggs
  • 2 medium carrots- diced
  • 1/4 cup of cooked peas
  • 2/3 cup of milk
  • salt + pepper to taste
  • vegetable oil

TOOLS:

  • Rolling pin
  • Circular lead -cut bread
  • board
  • 6- cup muffin tin
  • non-stick pan
  • oven

INSTRUCTIONS:

  1. Pre- heat the oven -180 °C  > 350 ° F. Cut the bread into circles -using a rolling pin, roll to flatten the bread circles. Apply/Spray cooking oil onto the muffin tin cups. Spread the rolled bread slices into each cup. Place in the oven for 3 mins till they get a bit dry but DON’T BROWN THEM.

2. Set the toasted bread cup aside to cool. Fry the bacon first, till slightly browned-3-5 mins. Lightly fry the carrots and cooked peas together for 2 mins -season with salt +pepper. Remove and set aside. Whisky 3 eggs, milk then season with salt.

3. Add in the fillings – peas + bacon, then by use of a ice-cream scoop, fill each cup with 1 scoop. Immediately- place in the oven and let it bake for 15 mins on 180 ° C.

FYI: remember not to fill the egg wash into the  toast cups.

4. Once baking is done, set it aside to cool for 5 mins. Serve warm.
