I always want to sample good food at great restaurants while out, but the best part about it is making a version of what you eat out at your own home. Imagine it as an acoustic version of your chef -ing skills with a twist. That’s exactly how I see, sample food outside and once I put that “apron” {Which I don’t actually own} on,…..ohhhh!!! I end up killing it.

Enchiladas and Enchilada soup are totally different amazing dishes, everyone should prepare and enjoy at home. Enchilada – is originally from Italy and is corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations. My definition of Enchilada soup – is a combination of shredded chicken pieces, enchilada sauce, bean,  stripes of tortilla, cheese and spices to pot and bring mixture to a boil.

Let me show you how easy you can make this soup using the ingredients you have.

Making ” Enchilada sausage bean tortilla soup”

prep time: 5 mins   Cook time:  30 mins    Total time: 35 mins

Yields/Serves: 3 pax.

*Main Ingredients*

– 1 cup of cooked beans {mine were frozen}

-2 chopped ripe tomatoes

-4 tortilla wraps {cut into stripes}

-1/2 a cucumber diced

-1 white large chopped onion

-8 skinless diced sausages.

-parsley {Garnishing}

*Ground spices*

-black pepper, chili flakes, coriander, ginger, salt, cardamom & paprika.

*Others*

-butter, tomato paste, and soy sauce.

*First things First*

  1. Add butter, on medium high heat in a sufuria/sauce pan. Put in the onions, let them mix with the butter till slightly brown and translucent. Then in with the tomatoes and combine well for 2 mins. Then add in all the ground spices, mix and give it 1 min to combine.

2. Add in chicken/ beef broth or just a cup of water if you got non of that. Allow it to simmer for 5 mins. Add in the beans, mix well then add in the soy sauce + tomato paste – 2 tsp of each.P1100573

3. Once it gets thick, add in a cup of broth or water mix, and let it boil for 10 mins. Later add in the sausages and mix well for 2 mins.

4. Add a few pieces of the striped tortilla into the stew and mix well. The tortilla add in a spicy flavor and texture to the soup. Sprinkle in the cucumbers.

5. Its advisable to serve the soup immediately, while still hot and all the flavors adding a beautiful aroma to the room.

Final outcome.

The dish is already well balance and adding some pop of color with the fruits on the side makes everything healthier.
