Its’ been a minute since I last prepared a bread recipe. The best feeling is having your kitchen smell like a bakery every time you bake bread. Nothing beats the smell of freshly baked bread, it ends up soothing my soul and I wouldn’t trade that option to any other. Although this recipe is quite time consuming, the end result will help you forget the amount of time you’ve been waiting to have a bite. These dinner rolls are moist, spongy, fluffy and delicious especially if you enjoy them while they are still warm.
Making “Fluffy Dinner rolls”
Prep time: 5 mins Proofing time: 2 hrs 30 mins Bake time: 20 mins
Cooling time: 20 mins Total time: 3 hours 30 mins
Here’s what you’ll need:
- 3 Tablespoons of butter OR margarine
- 1/4 teaspoon of salt
- 2 Tablespoons of sugar
- 1 egg
- 1/2 cup of cold milk
- 2 teaspoons of active dry yeast
- 1-1/2 cups of all-purpose flour
- 1/4 cup of extra flour
- An oven
- Saucepan + a lid
- wooden spoon
- silicon mat OR rolling board
- Casserole dish
- Kitchen towel OR cling film
- Pastry brush
Step 1: Make a sticky dough + 1st Proofing = 1 hour.
In a saucepan, melt the butter over medium heat. Once all melted, turn off heat. Immediately add in the cold milk, this will lower the temp” and to make it luke warm. Add in the salt + sugar, mix everything with the wooden spoon until it dissolves. Add in the egg + active dry yeast. Mix well and leave it to activate for 2 mins. Add in all the flour and mix with the wooden spoon until no flour is visible and it’s well combined. Cover with a lid and set it a side to double in size = 1 hour.
Step 2: Knead the dough + 2nd Proofing = 30 mins.
The dough will still be sticky. Knock out all the air, by mixing with the wooden spoon = 1 min. Transfer the dough to a work surface with a silicon mat. Dust it with flour – gently knead for another = 1 min. Place the dough back to the saucepan and cover to double in size = 30 mins.
Step 3: Knead + divide the dough + 3rd Proofing = 1 hour.
Place the dough onto the silicon mat, dust it with flour and knead the dough for = 3 min till its’ easy to form a ball shape. Divide the dough into four equal parts. Take each piece, roll it out to a log of 8 inch, and fold it like you are tying a knot. The video above should guide you. Place the 4 pieces into your casserole dish. Cover with a kitchen towel and place in a warm area to double in size = 1 hour.
Step 4: Preheat the oven at 180 C for the first =10 mins
Step 5: Coat with egg wash.
Brush some egg yolk on each bread roll.
Step 6: Bake for 20 mins at 180 C.
Step 7: Cooling = 20 mins
Step 8: Serve and enjoy.
