Today’s post is all about showing you guys how to make the most crisp, crunchy and flavorful roast potatoes on the outside with a slight twist of gooey-ness on the inside. It uses a little bit of our science knowledge but am sure y’all will keep up. If you need to jot this down somewhere, please do. Let’s get started.

Making “Garlic Roasted Potatoes“.

Prep time: 20 min  Roast time: 1 hour  Total time: 1 hour 20 mins

Serves = 2 people


  • 8 medium potatoes – peeled, largely cubed
  • 1 bunch of green onions – finely diced
  • 6 cloves of garlic – finely mined /crushed
  • 1 bunch of fresh parsley

Spices used:

  • 1 teaspoon of baking soda {bi-carbonate soda}
  • 6 Table spoons of vegetable cooking oil
  • salt
  • 1 tea spoon of smoked paprika
  • 1/2 tea spoon of garlic powder
  • 1/4 tea spoon of ginger powder
  • 1/4 tea spoon of cayenne chili – powder

Important tools:

  • Strainer
  • non stick frying pan
  • Oven
  • Baking tray
  • Sauce pan


STEP 1: Boiling the potatoes.

In a sauce pan, bring water to a boil. Add in salt, vegetable cooking oil and baking soda, then add in the diced potatoes for 10 mins or so.

NB:Boiling the potatoes before roasting them, helps moisture escape faster leading them to a thicker crust. Adding them to an already boiling water, concentrates this effect on their outer edges. You be asking why I’ve used the baking soda, well its because: – Baking soda is alkaline and it causes pectin, the potatoes cellular gluten to break down resulting in more surface area and a higher crunch.

Boil the potatoes until when forked it goes through and the outside becomes flaky. Once boiled, drain out all the water and set the potatoes aside to steam off, to allow moisture to escape.

STEP 2:  Infused garlic mix.

In a frying pan, add the 6 Tablespoons of vegetable cooking oil – Let the oil heat up for 1 min, add in the diced green onions – once it starts to get slightly browned, add in the garlic and let them infuse the flavors together for another min.

STEP 3: Strain the oil.

In a large bowl, strain out the infused oil. Add the potatoes to the oil, Toss them around to be all well coated. Add in the garlic mix to the potatoes, season them with the spices, toss them around roughly until you get an almost mushy paste from the potatoes.

STEP 4: Time to roast.

Pre heat your oven to 200 ° C {400 ° F} and roast for 1 hour. But first, bring out your baking tray, place the seasoned potatoes, and spread them out -leave a little space between each potato. Between that 1 hour, every 20 mins, take the potatoes out, and flip them around to get every potato roasted well and browned /crisp all over.

STEP 5: Garnish to your choice.

Plate the roasted potatoes. Garnish with chopped parsley and some sauce, and as always – ENJOY!!
