My readers always send me emails asking how I come up with dishes to make at the end of the day, well… what normally happens is at the back of my mind I have a rough idea what main ingredients I have. Before the end of the day,I have researched what dishes I can prepare with ..eg Potatoes, eggs, rice or whatever you want to eat when you get home. The food has to be balance or at least have carbs, proteins or vitamins or vice versa or all.

Hope I have answered your question/s.

Hash browns are basically a dish made by shredded/grated potatoes and pan fried. You can totally add in other ingredients like sliced or diced sausages or eggs to it.

Wanted to prepare this dish yesterday for dinner, then I remembered I had left over “githeri”, so I had that instead. Woke up today morning excited to make this healthy and filling dish.

How to make: “Hash brown with Omelette.”

*Main Ingredients*

– 2 large peeled potatoes

– 2 eggs

– butter

– grater

– 1/4 tsp of rosemary

– 1/4 tsp of salt

– 1/2 tsp of chili flakes

– 1/4 tsp of paprika

– 1/4 black pepper

*Method*

1. Wash the peeled potatoes and grate them. Once grated, using cold water, wash the grated potatoes 3 times to remove the white starch.

2. Get a handful of the shredded potatoes and try to squeeze out all the water. Place them on the paper towels to drain out the remaining water.

3. Pre- heat a frying pan. Its advisable to use a non- sticking pan, I have non of that at the moment. {Use the pan you have}. Cut a stick of butter and let it melt to the pan. Sprinkle in the shredded potatoes to the pan and fry.

4. Let the potato sit there for a 2 mins, then start to season it the all the flavors mentioned above. Using a spatula, scoop and turn it and let it brown. Don’t worry if the whole thing doesn’t turn {Its not a pancake} Scoop the others and turn till is crisp and brown. You will decide when you think its ready. Push the hash to one corner of the pan to create space for the eggs. Add the eggs and let it sit for 2 mins, season with chili, salt and paprika.

Serve when it ready.
