Every apple pie recipe I stumble upon on the different food blogs, each of those blog post start with either”When I was growing up, my mum made one of the best apple pie, or Courtesy of my grand mother’s recipe this is how to make the best epic apple pie”.

Neither of my grand mother nor my mother know what an apple pie is leave alone how to make them. They know more of how to make “Mursik’ or how to cook chapatis – and they are good at it. That’s where I come in. Thanks to the internet and lots of research, you get to choose who’s recipe to follow and how to make them.

Let’s make “Hearts & stars Apple pie.

Prep time: 35 mins  – bake time: 40 mins = 1 hour 25 mins

Serves: 4 pax

MAIN INGREDIENTS:

Pie crust:

  • 1/4 cup of  iced water
  • 1 stick of cold unsalted butter -cut in cubes
  • 1 -1/2 cups of all purpose flour
  • 1/2 tea spoon of salt

Apple pie filling:

  • 3 apples – peeled and diced
  • 1/4 cup of brown sugar
  • 1 tea spoon of cinnamon
  • 1/2 tea spoon of orange zest
  • 3/4 cup of mango juice {OR use apple juice}
  • 1/4 cup of water

Other ingredients:

  • 1 egg -beaten
  • 1 Table spoon of milk

INSTRUCTIONS:

  1. Making the pie crust:

In a large bowl, add the flour + salt and mix them together. Add in the cubed cold butter and with clean hands, mix them together till you get a crumble flour mix. Using a Table spoon, gradually scoop in the cold water to the flour mix and use the other hand to mix it till you form a dough. Wrap the dough with a cling foil and place in the fridge for 30 mins.

2. Making the apple pie filling:

Place all the ingredients into a sufuria /saucepan while covered – heat it over medium high heat for 30 mins till the apple get soft. Then set it aside as we prep the pie crust.

PRE HEAT  your oven to  220 Degrees Celsius.

Get the pie crust out of the fridge. Flour your counter top, cut the dough into two pieces. Roll out the first half to 11 to 12 inches wide. Don’t concentrate on the shape -THAT’S NOT IMPORTANT. Get your pie plate – PS: I don’t have a pie plate, so I just used a normal food plate with a slightly hollow well. It works well.

Place the rolled out dough on the plate and poke holes all over the base of the dough using a fork to allow circulation of air while it bakes. Add in the apple pie filling without the sauce – set aside as you roll out the other dough piece. Once rolled out, using cookie cutters – I have for hearts, stars and crescent moons. Play around with the shapes and decorate the top of the pie.

Brush on some egg wash on the cookie cutter pieces and sides of the dough – bake in the oven for 40 mins or till the pie is golden brown.
