Cheat meal anyone? By anyone, I mean all those dieting from carbs, the gym gurus and everyone else in between. Not only is this recipe easy to prepare, but also readily available from your local market, and let’s not forget quite affordable as per the ingredients used. This is one of those meals I cannot eat more than twice a week, but when I do prep it, my friends and family can’t get enough of.
In order to prep this, here’s what you’ll need:
Making “Honey Chili Potato“
Prep time: 5 mins Cook time: 20 mins Total time: 25 mins
Serves: 2 pax
MAIN INGREDIENTS:
- 5 large potatoes – peeled and sliced
- 1/4 cup of corn flour
- 1/2 cup of plain flour {same as all purpose flour}
- 1 teaspoon salt
- 2 cups of cooking oil – deep frying
For the sauce:
- 1 teaspoon of minced ginger
- 1 teaspoon of minced garlic
- 1 tablespoon of cooking oil
- 2 teaspoons of sesame seeds
- 1 bunch of spring onions – chopped
- 1 tablespoon of dark soy sauce
- 2 tablespoons of honey
- 2 tablespoons of hot & sweet sauce
- 1/2 cup of ketchup
- 1/4 cup of water
Important tools used:
- Measuring cups /spoons
- tongs
- sufuria /saucepan
- serviettes
- heat proof spatula
- frying pan
- mixing bowls
- plate
Instructions:
Step 1: Preheat your saucepan or sufuria with cooking oil enough for deep frying over medium heat.
Step 2: Coating the sliced potatoes
Into a large mixing bowl, add semi wet sliced potatoes + corn flour + salt + plain flour. Make sure they are all coated and mixed well.
Step 3: 1st deep frying = 9 mins
Place the coated potatoes into the hot oil. I fried them in three batches between 3 mins each. Once you place them into the oil, immediately gently break them apart to avoid sticking to each other. As soon as they start floating to the surface, scoop them out and onto a bowl with serviettes/paper towels to drain off excess oil.
Step 4: 2nd deep frying = 3 mins
Increase the heat to medium high. Double fry them in the same pot of oil for 1 min each {I’m still working with 3 batches} until golden brown. The texture you should look out for is, crunchy on the outside and soft on the inside.
Step 5: Prepping the sauce = 5 mins
Heat your frying pan with cooking oil over medium high heat. Add in the ginger and garlic, cook until the flavors have infused together and browned. Add some salt and dark soy sauce. Mix well. Immediately, add in the hot & sweet sauce, honey, ketchup and water. The water is to help slightly thin down the sauce and avoid it from burning. Once the sauce thickens, it’s ready. Turn off heat.
Step 6: Glazing the potatoes
Add the hot honey sauce to the golden fried potatoes and mix well.
Step 7: Serve and enjoy.
