Bhajias’ also known as “Pakoras” are deep fried finger snacks enjoyed by East Africans especially by Kenyans and the Tanzanians. Potatoes being the main ingredient mixed with gram flour,veggies, spices and served with a sweet, sour or hot sauce. This snack is commonly inherited from the Indian community.

Walking around these streets of Nairobi-Kenya trust me, you will always find a cafe, restaurant or a food court that sells these finger snacks. They might not be of the same quality but depending on your taste, you will definitely find what you are looking for. Personally, when it comes to bhajias”, my go-to food court in Nairobi CBD {since this is where am mainly located} has got to be Sonford – located along Moi Avenue opposite the bazaar {former TSC building}. For as little as $1 – KSH 100, their quantity is worth KSH 250 – $2.50. I Love it!! I highly recommend it, if you haven’t tried them out, you definitely should.

The thought of making a homemade version, never really crossed my mind until two days ago. Its’ much more affordable if you decide to make it yourself since every ingredient I have used in this recipe is a day today ingredient in both our {yours & mine} pantry. I thought WHY NOT?!

Making “Hot & Sweet homemade bhajias

Prep time: 15 mins   Cook time: 30 mins   Total time: 45 mins

Serves: for 2 people


  • 9 potatoes – peeled & sliced
  • 3/4 cup of all-purpose flour
  • 6 cloves of garlic – minced
  • 1 bunch of green onions
  • 2 tomatoes -diced


  • 1 teaspoon  of Black pepper
  • 2 teaspoons of salt
  • 1/4 teaspoon of cayenne chili powder
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of ground ginger


  • 2 teaspoons of soy sauce
  • 1/4 cup of ketchup
  • 2 Tablespoons of hot & sweet sauce
  • 1 -1/4 cups of sunflower vegetable cooking oil
  • 1/2 cup of Water


Step 1: Prep the potatoes and the flour paste

Slice the potatoes and set aside. In another bowl, mix the flour + salt + water. Add the water gradually -Bit by bit, as you continuously mix them together to form a thick paste, like that of pancake batter.

NB: Normally this recipe calls for Gram flour. Instead, I used, all-purpose flour to add more crunch to it {the obvious reason -I didn’t have gram flour}, and the salt – sucks all the moisture out of it and also for taste.

Step 2: Preheat oil & Deep Fry

In a saucepan or frying pan, add your oil and heat it over medium-high. Dip the sliced potatoes into the flour paste, and into the frying pan. Heat each side for 1 to 2 mins and repeat the other side. Cook until its golden brown. Place them in a bowl over paper towels /serviettes, to drain the excess oil and cool slightly.

Step 3: Prep the Hot & sweet sauce

In a frying pan, with some oil – 1 tablespoon -, saute the green onions until golden brown. Add the tomatoes – allow them to cook for 3 mins or until mushy. Add some hot water – 1/4 cup and then the minced garlic + the spices and soy sauce. Mix them well, cover to allow simmer. Once the liquid has slightly thickened, add the ketchup + hot and sweet sauce am mix everything. If the sauce is too thick, add some hot water, but if you are okay with its’ consistency – no need for the water addition. Adjust the spices if need be. Turn off heat.

NB: If you’ve ever ordered a home delivery from KFC especially the boneless chicken fingers, they always come with a small container for “Hot and sweet sauce” – I LOVE IT. That’s exactly what I used here.

Step 4: Mixing the sauce to the bhajias

In a large bowl, place the sauce first at the bottom, they add in the cooked bhajias. Toss them around together till the sauce has been well coated. Immediately serve.

Final outcome:

Wishing there would be a way you could smell this!! If I can feed your eyes, then best believe it I can feed you great and delicious appetizing home cooked food.
