JAMAICAN CORNED BEEF

We all can cook beef, whether stewed, dry fry or grilled/choma, but ever tried using ketchup or choma sauce in place of water to cook the beef?? There is always a first time for everything.

Got this idea from a Jamaican new pal of mine, and on this cooking session, he used thin stripes of liver and steak sauce /tabasco. He mentioned you could use any other type of meat, so I went with beef -since its the most cooked meat anywhere.

How to make “Jamaican corned stir fry beef with choma sauce“.

Prep time: 8 hrs {Marination}  Cook time – 45 mins

Yields/ Serves = 2 pax

*Main Ingredients*

– 1/4 kg of beef chunks

– 1 packet of baby corns

– 1/2 cup of fresh peas

-5 gloves of grated garlic

-1 large diced white onion

*Main Spices*

-1/2 tsp of salt, black pepper, chili flakes, rosemary, ginger, paprika, coriander.

*Sauces*

-Choma sauce, soy sauce & hot and sweet sauce.

*Method*

  1. We will be using marinated beef which took 8 hrs or {over night}.How I marinated the beef “Just all the spices into the beef chunks and added all the powdered spice, mix it up then cover with a clear foil – store in the fridge overnight.”

2. medium heat a pot with vegetable oil and fry the onion and garlic together till they are clear, then add in the marinated beef and mix well.

3. Cover the mixture for 10 mins, as you prepare the rice {optional} After 10 mins, on this stage {Instead of water} Add in the 2 sauces – hot and sweet and choma sauce {2 twirls of each sauce}. Stir continuously. Don’t cover yet.

4. Let it fry for 5 mins {not covered}, then later add in 2 serving spoon of water , mix well and let it simmer for 5 mins while covered.

5. Later on add in the fresh boiled peas {first}, then baby corns and let is heat with the little stew.

6. Mix the combination and sprinkle the soy sauce and continuously mix for 2 mins. Leave it to simmer for 4 mins, then remove it from heat.

7. Serve while still hot. I had prepared “Vegetable Rice” to go with the beef.
