At one point in my life I have thought about actually going vegan, but I have fallen off the wagon a million times. The longest I have tried being a vegan, is one week and that was the longest week of my life. I keep telling my self, that baby steps can work, but hell… who am I kidding. Not sure how y’all vegans do it, but “hats off to y’all. I will definitely stick to my lane…. “Scratch that” …. to my carnivorous ways, since that’s the best way for me before my body’s immune system goes to withdrawal stage.

However, trying the vegan dishes once in a while will help me detox, and stay healthy on numerous occasions.

I’ve got to confess that am one of the few Kenyan fans to “Fully raw by Kristina’s food blog. She fully represent recipes on raw food/dishes and for this particular dressing, I borrowed her idea but instead of using “zucchinis” I used pasta.

Making “Mango -Avocado pasta dressing”

Prep time: 5 min   Blend Time: 5 mins  Cook time: 10 mins

Yields/Serves: 3 pax

*Main Ingredients*

-ready made pasta

-2 ripe mangoes {diced}

-1/2 ripe avocado

-strawberries {for garnish} OPTIONAL

-2 Tsp of sugar

-3 tsp of low fat yogurt

-1 lime

-Blender

*Method*

  1. Place the diced mangoes, diced avocado, sugar, lime juice to the blender and puree it. Add in the low fat yogurt and blend again until all is smooth.

  1. Place the pasta into a different dish, pour in the dressing – mix it up. Transfer the pasta onto a plate and topped it up with strawberries.

Final Outcome:

Served with a chilled glass of red “4 cousins wine”

You totally don’t need meat for this dish. Its great as it is. Trust me!!

This is the most creamy dish with the best of both worlds {Savory and Sweet} you can possibly have with pasta, and the strawberries add in flavor and color. The wine- Oh my!!! Chilled and crisp as always.

FYI:

The lime juice helps the dressing contain its color a long period. We all know that when we cut an avocado and leave it open, it changes color to brown or black, well that aint cute. Lime juice comes in handy and its a preservative of some sort.
