I love being creative especially when it comes to preparing food. There are no rules when it comes to food art, you’ve got to think “beyond the box” and always have fun while making any dish.

The best thing about “Tastie Dine” it was created specifically for easy dishes using readily available ingredients that you can acquire both from your “Mama mboga” or your local grocery store”. There is nothing complicated with my recipes, but what I cannot accept is eating dishes prepared the same way over and over again.

That is an-acceptable.

Borrow ideas if you have to. I do it all the time from different food bloggers or foodies but the catch is “Always make it your own”, by adding a unique technique to it. I cannot promise you the outcome will always come as you thought it would, but its will be a great thing that you tried.

Making “Mashed Potato rings with Guacamole”.


1st – Prepping -Spicy Guacamole”

Prep time: 5 mins  Chill time: 6 mins  Total time: 11 mins

*Main Ingredients*


-1 ripe Avocado

-1/2 a lime

-1 tsp of chili flakes, 1 tsp of salt, 1 tsp of black pepper.

-1 medium tomato.


  1. Mash the avocado using a spoon or fork- but leave in some lamps. Dice the tomatoes and set aside. Cut the lime and squeeze 1/2 of the lime to the avocado, season it and mix well. Add in the diced tomatoes and combine. Cover with a clear foil and refrigerate it for 6 mins.


2nd – Prepping – Mashed Potato Rings.

Prep time: 10 mins  Cook time: 30 mins  Total Time: 40 mins

*Main Ingredients*


-5 potatoes – peeled, diced & boiled

-1/4 cup of milk

-1 thick stick of butter

-1 cup of all purpose flour

-potato masher

-1 cup of bread crumbs

-enough corn oil -{for deep frying}

-1 tsp of salt, 1 tsp black pepper, 1 tsp of coriander, 1 tsp of cayenne chili flakes, 1 tsp of paprika, 1 tsp of garlic powder.


  1. Add the butter, and milk to the potatoes {They have to be cooled before mashing}. Using your potato masher, mash until all is smooth.


2. Season the mashed potatoes, then add in the bread crumbs and combine using your “Clean Oily” hands. Oil your hands using vegetable oil – to avoid the mash sticking to your hands. Bring it to a dough consistency.


3. Make sizable balls using the mashed dough” with your hands, flatten it out using your palms – poke a hole in the middle and set a side.


4. Pre-heat a skillet or sufuria with vegetable oil on medium high heat, as you continue coating the potato rings with flour, set aside as the oil boils.

FYI – forgot to take pics for the flour coated rings, but finally got to snap this ones before I fried them all.


5. Place them on paper towels or serviettes to drain the excess oil. Serve immediately.

Final Outcome:

Serve it with the “chilled spicy Guacamole”.

Looks delish huh!!!.


Crunchy on the outside and super flavor bursting -gooey on the inside. My colleagues are my samplers.

This is what I had for dinner – with a chilled glass of white wine. Woke up and had the same but with milky coffee. Very filling, healthy and quite a special snack or main dish.
