Meatloaf  is a dish of ground meat mixed with other ingredients, formed into a loaf shape, then baked or smoked. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand on a flat baking pan.

Feeling excited that my blog is up and running after I experienced some hiccups in uploading pics and 4 of my April posts “vanished without a trace”, hence the migration. It took forever, and trust me I was devastated since I live and dream of my blog all day if not everyday. With the excitement I had yesterday, what better way to celebrate my reunion to my blog by making a meatloaf dish – Part 2. #LongLiveTastieDine.

Prep time: 25 mins   Bake time: 30 min  Total time: 55 mins

Yields: 12 Meatloaf cupcakes


  • 1/2 kg of ground beef
  • 4 potatoes
  • 1 carrot – peeled, and cubed
  • 1 red onion – diced
  • 1 green onion – diced
  • 2 cloves of garlic- minced
  • 1 bunch of parsley – chopped
  • streaky bacon – OPTIONAL
  • 2 eggs
  • 5 slices of bread /1/2 a baguette {Instead of Bread Crumbs}
  • 1/4 cup of milk
  • 1 Tablespoon of vegetable cooking oil
  • 1 cup of ketchup
  • 2 Tablespoons of mustard
  • 2 Tablespoons of butter or margarine – at room temperature
  • Spices in powder form: Salt + Cumin + Ginger + Cayenne chili + garlic powder + turmeric


Prepping the potatoes:

  1. Cut each potato into a quarters and bring them to a boil for 8 to 10 min over medium heat- they need to be of the same size for easy and equal cooking. Once cooked through, drain all the water, season with salt add the 2 Tablespoons of butter -softened and mash them to soft and smooth texture. set it aside.

Prepping the bread:

2. At this stage, I prefer to use cut out bread and milk combined than using bread crumbs. Bread crumbs compact the meatloaf and make it tough and dry, while the bread -milk combination will help the ML to moist and super soft.

3. Saute {Lightly fry} the garlic + carrots + onions {red and green} but  leave some for garnish for 5 mins or until soft. Switch off heat, and set it aside to cool. Place the ground beef in a large bowl, add in the spices + milk -bread combination + saute vegetables + 1/2 cup of ketchup + chopped parsley {leave some for garnish + mustard + 2 eggs. Mix everything together.

Prepping the cupcake baking tins:

4. Pre heat the oven to: 350 °F OR 180 °C. Brush some vegetable oil onto the baking tins, in each cupcake tin, add a streaky stripe of bacon and fill them with the moist meat mixture. Bake for 30 mins.

5. Prepping the mashed potatoes

Use a piping cake bag to add in the mashed potatoes. Or you can still use the Zip lock bag for the same purpose.

6. Once baked, let it cool on the baking tins for 5 mins then transfer the to a cooling rack to cool completely for 10 mins. Apply half of the remaining ketchup on top of the baked meatloaf’s, then pipe out the mashed potato on top of the sauce to act as the frosting. Place them on a plate and garnish – serve.

Final outcome:

A super healthy meal is served.

    So trying this! I can almost taste it yum!. PS…can I substitute the ketchup? Not too fond of it I’m afraid…
