Keto, paleo, low carb, and gluten free meals are the most common dishes and recipes that keep popping up at the top of my Instagram feed and it got me curious what each word meant. You guessed it right, I started doing my little research and even trying out a couple of the dishes that tickled my eyes to see what others saw and enjoyed while they ate those meals.
I decided to start with a Keto meal and as per the title of this article “Mexican cauliflower rice with mushrooms” is a meal I’ve been dying to prepare and taste, and if am honestly reviewing this dish I’d say it basically tastes like shredded cabbage. You definitely need to try it out and then tell me what it tastes like for you. If seasoned well, its very tasty, I’d definitely pick it over rice any day, now that I have tried it out. I actually love it. The other thing I’ve noticed about this dish, is that it does fill me up for hours. I never expected it to be so, since its just vegetables, and clearly I don’t like vegetables.
Keto diet short form for ketogenic diet is a low-carb, high-fat diet that offers many health benefits. It involves drastically reducing carbohydrate intake and replacing it with fat. This reduction in carbs puts your body into a metabolic state called ketosis.
Here’s what you’ll need: –

Serves: 1 pax
Yields: 1 serving
- 1 cauliflower
- 1- 1/2 cups of button mushrooms
- Chives – for garnish – OPTIONAL
- Mint leaves – for garnish – OPTIONAL
- 1 small white onion
- 6 cherry tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 Tablespoon veggie oil
- 3 cloves of garlic
- 1 -1/2 teaspoon of tomato paste
- 1 Tablespoon of water
Important tools used:
- a stove
- sauce pan
- wooden spoon
- chopping board
- grater / OR/ Food processor
- serving plate
- Turn table – OPTIONAL
Step 1: Prep the cherry tomatoes – slicing them in half, then into quarters. Set them a side.
Step 2: Prep the button mushrooms – Slicing off the stalk, discarding them. Thinly slice the head and set them a side.
Step 3: Prep the cauliflower – First slicing it into a half. Remove all the green leaves and the stalk. We only need the white part which is the head. Cut them into small pieces so it can be easier to grate it or pulse it using a food processor if you have it. If you are manually grating it like I did, use the larger blade to get a much finer and same sized pieces. This might take about 2 or 3 mins, but with a food processor it may take 30 secs. The consistency resembles that of actual rice granules. Set that a side.
Step 4: Prep the onion + garlic – Roughly chopping both the onion and garlic.
Step 5: Cook the onion + garlic + mushrooms – Over medium high heat, place a non stick saucepan and drizzle veggie oil. Add in the chopped onion + garlic and toss them around for 1 mins or just until the garlic becomes fragrant. Add in the sliced button mushrooms and mix everything together until all the water from the mushroom evaporates , this will take 3 mins. Season with salt and cook for another 30 seconds. Remove from heat and set it aside in a bowl.
Step 6: Cook the cauliflower + add the tomato paste mix – Using the same pan over medium high heat, drizzle veggie oil and add in the grated cauliflower. Toss everything around and DO NOT COVER IT. We need it as dry as possible. Continuously stir it as it cooks for exactly 2 mins. In a small bowl, add the tomato paste + water mix it until its well combined. Add in that mixture to the cooking cauliflower and mix everything together as it cooks for another 1 min. Add in the cooked mushrooms + caramelized red onions – OPTIONAL and mix well. Allow it to cook for 1 more minute. Turn off the heat. NB: Remember to save like a teaspoon of both the mushroom mix and the caramelized onions to be part of the garnish.
Step 7: Plate the food and garnish to your liking. Enjoy it while it’s still hot. – Do you remember the sliced cherry tomatoes, don’t forget to use them as part of the garnish. I topped up the garnish with more color and flavor of mint leaves and chives. I believe the color scheme is now balanced.
