Sweet, savory {YES!! in the same sentence} and loaded with lots of spices and flavors, who could ever say no to this delicious snack?? Yesterday, I made some Mexican street corn for dinner and trust me, “its – out- of -this -world”. Its delicious.

An Elote is  basically a Mexican way of serving corn. It is customarily consumed on a barbecue stick, or by grasping the husk of the cob that has been pulled down to form a “handle”. Condiments such as salt, chili powder, butter, cheese -Cotija, lemon juice or lime juice, mayonnaise, and sour cream (or crema) are usually added to the elote.

This recipe is great for serving family-style. Put all of the ingredients out separately and let your guests top the corn however they wish. With the Christmas holiday around the corner, this is just too perfect for a brunch or a barbecue. Haven’t I just given y’all an idea?

Lets get cooking.

15 mins  – 3 servings.

MAIN INGREDIENTS:

  •  3 yellow sweet corn
  • 1/2 lemon
  • 1/2 lime juice
  • lemon zest {OPTIONAL}
  • 3 Tablespoons of Mayonnaise
  • Vegetable oil / Or Melted unsalted butter
  • Cheddar Cheese finely grated. /Or Cotija / Or Parmesan
  • Spices: ground chili, Chili flakes, Salt, Black pepper & Paprika.

TOOLS:

  • Sauce pan /Or Sufuria
  • Barbecue sticks – 3
  • Tongs
  • Brush

INSTRUCTIONS:

  1. In a sauce pan, add water + salt + yellow corn and bring it to a boil for at least 5 mins. As it boils, Prep the glaze: In a small bowl, add mayonnaise + paprika +black pepper + chili + lemon juice  and mix well to form a smooth paste.

2. Turn the heat off. Drain the water and using your tongs, place the corn on a plate. Let it slightly cool for 2 mins. Using the barbecue sticks, stick them right in the middle of the maize cob until 1/4 of the stick – sticks out.

3. Using your brush, apply a little of the melted butter or vegetable oil all round the corn, apply the mayonnaise spiced paste all over the corn, then roll the corn onto the grated cheese to coat it. Sprinkle chili flakes and lemon zest. Serve with slices of lemon.
