For the past week, I had made several different sweet and savory dishes, but never got to post them. The preparation started so well, but the end result really did not tickle my fancy. Once this happens I go back to my drawing board- re-watch the original video, re-measure the ingredients and have a watchful eye on everything about that dish. I am not a perfectionist, but I love acquiring positive results all day everyday especially with cooking /baking. With that being said, of all the “many dishes” I have prepared the past week, this “mini apple pie” baked out perfectly on the first try.

Making “Mini Apples Pie “.


A. Flaky Crust” {This is the most important part of any pie}

Prep time: 10 mins   Refrigerate: 20 mins  = 30 mins



  • 1 Cup of all purpose flour
  • 10 Tsp of cold water
  • 1/2 tsp of salt
  • 100 g of butter at room temp – cut into cubes.


  1. Mix the flour + salt together, then add in the butter and fork it till it resembles bread crumbs. Add 1 Table spoon of the cold water to the flour after each fold and mix till you it forms a soft dough. Cover the dough with a clear foil and refrigerate for 20 mins.


B. Apple Pie filling



  • 2 Apples- peeled, cut into small cubes
  • 1/2 an orange – Juice
  • 1 Tsp of all purpose flour
  • 1 Tsp of cinnamon
  • 1 Tsp of sugar


  1. In a bowl, place the cubed apples + cinnamon + flour + orange juice + sugar. Mix them till fully combined. Set aside.


2. Remove the chilled dough from the fridge. Roll out the crust to an 1/8 thick. Using the lead of the peanut butter jar, cut out circular shapes and on the remaining pieces, using your cookie cutter, cut out different shapes- eg: hearts, moon, starts etc.



3. Pre- heat the oven to 220 degrees Celsius. Oil the muffin tin. Stretch out the circular shaped dough -just a little bit, firmly fix it onto the muffin tin. Add in the apple fillings as shown. Using 1 egg, beat and brush the egg wash on to the top of the mini apple pies. “This will help brown the top side while it bakes”.


4. Place in the oven to bake for 25 mins on 22o degrees C.


Final outcome: Let them cool for 10 mins and serve.


They are such a beauty to the eye, candy to the tongue and best aroma for the nose. I would literary kill for this dessert any day. The crust is perfectly flaky, and that should be the consistency to look for. The apples are moist with a sweet cinnamon texture and flavor, not forgetting the slight taste of the orange  juice. This is AMAZE-BALLS!!
