My current addiction.

Meat balls, but now I have added potato lollipops, something I dint even know existed. Surprise!! Surprise!!

After the fluffy pancakes I made yesterday morning for my breakfast, my readers have been going crazy about the recipes and am grateful that people appreciate my work and want to implement it on their dining tables.

How to prepare: “Mini-meat balls and potato lollipops”.

Prep time: 15 mins  Cook time: 1 hour 20 mins

Yields /Serves – 4 pax

*Main Ingredients*

{Mini-meatballs}

-200 g of minced beef

-1 egg

– 2 beaten eggs for coating [share with potato lollipops}

– 1/2 cup of flour {binding}

-1/2 bowl of bread crumbs

– 3 grated garlic

-1/2 tsp of coriander

-1/2 tsp of chili

-1/2 tsp of black pepper

-1/2 tsp of paprika

1/2 tsp of ginger

-1/2 tsp of salt

*Main Ingredients*

Potatoes ingred

{Potato lollipops}

-8 potatoes

-3 grated garlic

– 1/2 an onion {chopped}

1/2 cup of flour {binding}

-1/2 bowl of bread crumbs

– BBQ skewers

-1/2 tsp of coriander

-1/2 tsp of chili

-1/2 tsp of black pepper

-1/2 tsp of paprika

1/2 tsp of ginger

-1/2 tsp of salt

Method  – Mini- meat balls then Potato lollipops

  1. Take a pot and medium boil the potatoes with its skin on – give it 8 mins . Place the lean meat in a bowl, add in the powdered ingredients and mix them together using your clean hands.

2. After that, crack 1 egg, but separate the yolk and the egg white. place the yolk to the meat mix, and put the egg white away. Add in the grated garlic and mix using your hands.

3. Make meat balls using the flour{to avoid it sticking on your hands} then place them aside. Roll the mini- meat balls in bread crumbs and allow them to sit aside for 5 mins before frying them.

4. Remove the potatoes from pot and peel the skin off.

5. Using your potato masher, start mashing until is get fine and smooth. Add the chopped onions. Mix them together, using your hands till all is mixed.

6. Add in the powdered ingredients and mix with your hands.

7. When all mixed, make ball and place aside. Using the  2 beaten eggs, roll each of them in the eggs first then coat them using the bread crumbs.

8. Start frying the meat balls since they cook longer than the potatoes, then put in the potatoes. While the still fry, prepare a plate with serviettes or paper towels to place them. Allow them to sit for 10 mins before serving to allow, excess oil to drain.

9. I had initially made home made sauce to go with the dish. Serve it in a separate dish and plate it. Take the BBQ {Barbecue skewers} cut the skewers into halves and poke them right thorough the balls and potatoes, then plate them.

NB:

You can use any toppings, sauces or serve using other dishes. Its preferably served with a cold drink, since there are a lot of spices that will be bursting in your mouth.
