Middle Eastern dish of garlic seasoned type of beef or poultry grilled for as long as a day on a vertical spit  {also Rotisserie} then served on pita bread is known as Shawarma.The meat is shaved off the stack with a large knife, an electric knife or a small circular saw, dropping to a circular tray below to be retrieved.

Pita bread is also known as Arabic bread, Lebanese bread, or Syrian bread and is a soft /thick and fluffy, slightly leavened circular bread baked from wheat flour, which originated in the Near East,most probably Mesopotamia.

You get to have an option of having a vegan or a meat type of shawarma. This very article will concentrate more on the vegan type of sandwich , so let’s get over the ingredients.

Making “Mixed Veggie Shawarma Sandwich

Prep time: 15 mins  Cook time: 15 mins   Total time: 30 mins

Serves : 2 pax or more.

MAIN INGREDIENTS:

  • Pita bread  {bought it from Zucchini grocery store -ABC place}
  • 1/4 cup of desiccated shredded coconut
  • 3 tomatoes – sliced
  • 2 large onions – chopped
  • mixed vegetables – diced & chopped
  • 2 cloves of garlic- minced
  • 2 eggs – Boiled

Spices:

  • 2 Table spoons of vegetable oil
  • 1 – 1/2 tea spoon of salt
  • 1 tea spoon of soy sauce
  • 1 tea spoon of cumin
  • 1 tea spoon of paprika
  • 1/4 tea spoon of garlic powder
  • 1/4 tea spoon of ginger powder
  • 1/4 tea spoon of cayenne pepper
  • 1/4 tea spoon of chili flakes

Important tools:

  • Food processor
  • Aluminium foil

INSTRUCTIONS:

  1. Over low heat ,In a sufuria, add a table spoon of oil + onions and the minced garlic heat them until they are translucent. Add in all the tomatoes + 1 tea spoon of salt – mix -let it heat for 3 mins. Switch off heat and let it cool for 1 min. Add in the tomatoe – onion mix + coconut into a food processor and pulse it on low to form a paste.

2. In a different sufuria/ sauce pan, add a table spoon of vegetable oil on medium heat, add in the rest of the veggies and toss them around. Heat them for 5 mins – them season them with the spices mentioned. Add in the tomato + onion paste, add in to the mixed veggies, mix and let it till all the water evaporates -about 5 mins. Switch off heat, let it cool for 2 mins.

3. Depending on the number of people in your house, one piece of pita bread can be shared between two people. Take a piece of pita bread cut it into two. Take a piece of aluminium foil, warp it on the curve of the pita bread. Why you ask? In order to give it a better body, since the bread is very delicate and gets to tare off once the stuffing is sandwiched. Add a touch of protein from the slices of boiled eggs, and a drizzle of mayo -chili mix. Then serve.
