A molten chocolate lava cake is a slightly under baked cake similar to a brownie, with the outside being dense and crispy while the inside is super gooey. Once you split it in the middle warm chocolate oozes out and flows like lava hence the name.

Most people are intimidated to try and prep this lava cake and think there is something special with the recipe. Just because we find them at high end five star restaurants, doesn’t make it complicated. With the help of the video below, I will guide you to prep this delicious yet decadent simple dessert and you’ll be prepping them within no time.


Making a “Molten chocolate lava cake”

Prep time: 12 mins   Bake time: 12 mins   Cool time: 15 mins  Total time: 39 mins

Serves: 2 pax

Main Ingredients:

  • 50 g of chopped milk chocolate
  • 2 teaspoons of softened margarine
  • 1 egg at room temp
  • 2 Tablespoons of castor/Granulated sugar
  • 2 Tablespoons of all-purpose flour
  • 1/2 teaspoon of vanilla extract
  • a pinch of salt
  • Extra margarine – coating

Important tools:

  • Saucepan /Sufuria
  • Mixing bowl
  • Whisk
  • Jug
  • Tea/Table spoons
  • Measuring spoons
  • An oven
  • Baking tray
  • thin knife
  • ramekin tins
  • a plate
  • fork


Step 1: Melt the chocolate

Preheat the oven to 230 C. With an option of using a double boiler { Saucepan with hot water, then place a larger glass or aluminium bowl over the pan] add the chopped chocolate chunks and butter. Mix them together, till its smooth and melted. Turn off the heat, place the bowl on a kitchen towel to absorb all the condensation and set it aside to allow it to slightly cool.

Step 2: Mix the wet and dry ingredients together.

Using the jug, crack the egg + add in the vanilla extract and the castor sugar. Whisk them together till the mixture is slightly pale. Pour in the slightly cooled chocolate melt, mix them together. Add in the flour and salt and mix until everything comes together.

Step 3: Prep the ramekin tins & Bake them.

Generously grease the tins with margarine on the sides and the bottom of each of them. Divide the chocolate batter equally into each tin. Place them on a baking tray and bake them for 12 mins.

Step 4: Cooling = 15 mins

Take them out of the oven and let them cool for 15 mins before touching them. Once they cool, they should slightly shrink.

Step 5: Plate, garnish and serve.

Gently run a thin knife round the ramekin tins, to loosen it up a bit. Place a plate on top of one of the ramekin tins, and flip it upside down just as shown in the video above. Lift up the ramekin tin to release the cake. Sprinkle some powdered sugar and serve.
