In the beginning of the year the food craving I had was “Githeri” {Fried mixture of Beans and Maize} until late march, when I developed a new craving of Ugali with scrambled eggs.
It was just recently when I perfected my Ugali cooking, which I still find a major hustle. For some, preparing it is a piece of cake. Yesterday evening I did happily manage to prepare my version of the Nairobi local cuisine.
How to prepare: “Ugali + Scramble eggs + Fried cabbage.”
Prep Time: – 10 mins Total time: 40 mins
Yield /Serves = 2 pax
*Main Ingredients*:
– 1 cup of Maize flour
– 4 eggs
– 1/4 chopped cabbage
– 3 diced tomatoes
– 2 diced onions
– Cheddar cheese for toppings
* Other Ingredients*
– Cinnamon
-Salt
-Black/red pepper
– vegetable oil
Method.
- High heat 1 cup of water to a sufuria until it boils. Add in a handful of maize flour to the hot boiling water and mix it gently. As it start to thicken, at different interval keep adding a handful of the flour till it all the water becomes mixed to the flour. After 3 handfuls of the flour, using a “flat rounded cooking stick {Mwiko} mix the flour together till all the powdered flour has been bound together for the next 8 -10 mins. When ready, Serve into small dishes to acquire the round shape, cover and place aside.
- Get a different pan, add in the vegetable oil to heat up. First add the half the chopped onions, fry until golden brown -2 mins. Then add in half the diced tomatoes and fry until they mix and mash.
- Season with salt and the peppers, then add in the cabbage. Mix thoroughly. Allow it to steam for 5 mins.
- Beat the 4 eggs together, then add in the onions and tomatoes, add in 1/4 tsp of cinnamon, salt, chili and mix again.
- When the cabbage is ready, place it aside. Take another pan and add a tablespoon of oil, when hot, pour in the egg mixture and stir it for 8 -10 mins. Grate cheddar cheese toppings on to the dish.
- Serve when ready.
“There is nothing as hard as explaining how to prepare Ugali without mixing in 2 to 3 languages.” I have tried.
