Apparently, this was supposed to be a “three ingredient recipe” but that changed within minutes as I walked through the kitchen to find vibrant looking oranges by the counter top. I decided to incorporate them as part of the ingredients, and that was the best decision I made. I decided to use two strong ingredients – orange zest and garlic. I believe both combo work well with any meat dishes. Trust me, they do well together, all you have to know is balancing the quantities.

Let’s go over the ingredients:

Making “Orange flavored brown sugar chicken”

Prep time: 10 mins   Bake time: 30 mins  = 40 mins

Serves: 4 pax

MAIN INGREDIENTS:

  • 4 boneless chicken breasts
  • 1/2 cup of brown sugar
  • 4 cloves of garlic – minced
  • 1 large onion – diced
  • 1 Tablespoon of orange zest
  • 1 Tablespoon of sunflower oil
  • 1 Tablespoon of soy sauce
  • Improvised – Italian seasoning: 1 Tsp of smoked paprika, 1 tsp of cumin, 1 tsp of salt, 1/2 tsp of black pepper, 1/4 tsp of cayenne chili, 1/4 tsp of chili flakes, 1/4 tsp of ginger powder.

INSTRUCTIONS:

  1. Pre heat the oven to 220 degrees Celsius, then lightly grease a casserole dish and set aside.

2. Saute the onions on medium high heat for about 3 mins till slightly golden brown, then add in the minced garlic and mix for 1 min. {Best fragrance ever}. Remove from heat, and immediately add the brown sugar, orange zest and soy sauce. Mix everything till well combined.

3. Place the chicken breast into the greased casserole, lightly coat the chicken with vegetable oil on both sides. By use of your clean hands, apply the “Improvised Italian seasoning to both sides of the chicken, then smear the garlic/sugar mixture to both sides as well. Make sure every side of the chicken is coated well.

BAKE IN THE OVEN FOR 30 MINS.

4. Once baked, let it cool for 10 mins before serving. Feel free serve it with veges or mashed potatoes, but I decided to enjoy it by itself. Tasting each and every flavor is KEY.
