A quick marinade before baking or roasting the drumsticks or any other meat prep in general helps to enhance the flavor and improve on the tenderness. Sometimes that might be the method you go for, but for one reason or another you end up using this method right here and that is marinating and immediately barbecuing it.
Moreover, the barbecue mixed sauce I used to glaze while still barbecuing the drumsticks will caramelize and the flavor will be infused into the meat. Watch the video below to guide you. I mean, what can possibly be better than this?
Here’s what you’ll need:
Prep time: 5 mins Roast/BBQ time: 57 mins Total time: 1 hour 2 mins
Serves: 2 pax
Yields: 4 drumsticks
- 4 chicken drumsticks
- 1/4 teaspoon of grated ginger
- 1 teaspoon of grated garlic
- 1 teaspoon pilau masala
- 1 teaspoon salt
- 1/4 teaspoon cayenne chili powder
- 1/2 teaspoon cardamom
- 1/2 teaspoon chili flakes
- 1/4 teaspoon ginger powder
- 2 Tablespoons of vegetable oil
*For the BBQ mixed sauce*
- 1/4 cup of ketchup
- 1/4 cup of hot sauce
- 1/4 cup of BBQ sauce
Important tools required:
- An oven
- baking tray
- wire rack
- parchment paper
- mixing bowls
- pastry brush
Step 1: Preheat the oven at 220 C for 10 mins first.
Step 2: Prep a baking a tray lightly greased with an aligned parchment paper with a wire rack on top. Set them aside.
Step 3: Prep the chicken by mixing all the mentioned ingredients well. Place the chicken on to the wire racked baking tray. Bake in the oven for 45 mins first. Around 22 mins, open the oven and flip the other side to cook as well.
Step 4: Prep the BBQ mixed sauce. In a small bowl, mix all the sauces together, and have a pastry brush ready.
Step 5: Generously brush the sauce on both sides of the chicken as shown in the video above. Place them back in the oven to BBQ and infuse all the flavors for about 12 mins.
Step 6: You can brush more of the sauce or leave it as it is. Serve and enjoy.
