Happy Holiday’s to you and family.

This being the last video of this year, how about some mash-up Christmas Carol song as the background music to keep it festive, or at least that’s what I hope will cheer you all up.

The best way to end this year of 2018 is with some white wine, close friends/family, good music, and lets’ not forget home cooked meal/s, definitely in this order.

Let’s be real, this year has been awesome but with a couple of challenges too. I’d say am proud to have made one of the best choices of three decades, which was the biggest and scariest of them all. I mean leaving a comfortable and secure corporate job, getting out of my comfort zone and making my then side hustle to a now registered company and brand, this isn’t what we see everyday. Isn’t it?! Then with a couple of months down that line, I got to work with a couple of different big brands that I only dreamt of. Improved my network and connections in my field. This was totally a stepping stone in the right direction. I became the boss and soon I’ll have my own hand picked team to work with. Other than that, I am alive, healthy and super grateful that I came, saw and still conquering while clearing my path for greater things. I look forward to taking up 2019 by the balls with all the good, bad and ugly. I’m excited of the unknown and so should everyone else.

Now, let me show you one of the easiest recipes of some pan fried chicken drumsticks.

Prep time: 5 mins   Marinade “chill time”: 2 hours   Cook time: 30 mins

Total time: 2 hours 35 mins

Yields: 5 drumsticks

Main Ingredients:

*For the Marinade*

  • 2 cups of plain yogurt
  • 5 chicken drumsticks
  • 1 teaspoon of salt
  • 1 teaspoon of cayenne chili
  • 1 teaspoon of cardamom
  • 1 teaspoon of pilau masala
  • 1 teaspoon of ground ginger
  • 1 teaspoon of nutmeg

*Frying*

  • 1 Tablespoon of vegetable cooking oil
  • 1 teaspoon of butter
  • 1 teaspoon of grated garlic
  • 1 teaspoon of grated ginger

Important tools used:

  • Frying pan + Lid
  • Spatula
  • Wooden spoon
  • Stove
  • tongs
  • Mixing bowl
  • Clear cling film

Instructions:

Step 1: Prep the marinade

In a mixing bowl, add in all the ground spices and mix them together. Add in the yogurt and combine everything well. Add in the chicken drumsticks and coat them with the yogurt mix. Cover with a cling film and chill for 2 hours.

Step 2: Pan frying

In a frying pan over medium low heat, add cooking oil and add in the marinated drumsticks one at the time. Cover and let it cook for 10 mins then flip to the other side for another 10 mins while covered. Add in the grated ginger and garlic + the left over marinade yogurt sauce, mix everything and allow it to simmer for 10 mins until all the water evaporates.

Step 3: Serve and enjoy

Go right ahead to serve it with some white rice, Ugali, chapati or whatever else that might tickle your fancy.
