This recipe was basically inspired by Zeelicious.

What are plantains? Plantains are a close relative of the banana. They tend to be starchier than normal bananas hence have to be cooked first to be eaten. They are more of a vegetable than a fruit.

Every time I watch Miss Mandii’s vlog channel, deep down  -I always think it is about plantains. I will look at this statement as a good thing, you should too. Apparently, this topic on plantains – how it’s cooked, where to buy them, what to serve them with, are frequently asked questions Mandii always gets from her fans including myself. Hats off to her and her cooking, she’s good at what she does. Check her out.

I came to realize, after numerous research on plantains, there aren’t so many ways of cooking this delicious vegetable. The most common way of preparing them is by diagonally slicing them, and shallow frying {do not deep fry them – too much oil} or baking them. Serving/plaiting is where you could totally go wild. The creativity of this dish was brought about when I stumbled upon Zeelicious youtube channel and her blog.

Here is my version of Plantain egg frittata.

Prep time: 15 mins   Cook/Bake time: 35 mins   Total time: 50 Mins

Serves: 4 people

MAIN INGREDIENTS:

  • 7 eggs
  • a bunch of plantains { Bought them from Kasuku center – Kileleshwa}
  • 1 cup of pre – boiled beef {Optional}
  • 2 small tomatoes – diced
  • 2 small carrots – peeled and cubed
  • 3 cloves of garlic – minced
  • 1 bunch of green onions – chopped
  • 2 bunches of parsley – chopped
  • 4 Tablespoons Vegetable cooking oil – Liquid

Spices used:

  • Salt
  • paprika
  • garlic powder
  • black pepper
  • ginger powder
  • cayenne chili powder

Important Tools you’ll need:

  • an oven
  • heavy based pan

INSTRUCTIONS:

  1. First – peel the plantains, and slice them diagonally. Heat up some vegetable oil in a pan. Shallow fry the sliced plantains till golden brown on each side. Have a paper towel ready to soak up the excess oil.

2. Pre heat the oven: 180 C. Using the same pan, saute the vegetables {green onions + minced garlic + carrots} then add in the pre boiled beef to the mix together for about 5 to 8 mins. Make sure to season them to taste. In a separate bowl, beat the eggs together and lightly season with salt. Add in the beaten eggs in the sauteed mixed vegetables + chopped up parsley and the meat. Lightly combine – but don’t scramble. Immediately, take you fried plantains align them at the top to completely cover the egg mixture. Reduce the heat to low, let it cook while covered for 10 mins on the stove.

 

Bake in the oven for 15 mins – uncovered – on rack 3.

Final outcome. – Allow it to cool for 5 mins, then serve.

It’s best served while it’s still hot.
