Sometimes I definitely get lazy and need an easy dish with fewer dishes to wash afterward and trust me when I say that Pasta is one of those dishes. Red sauce pasta always does the trick for me, I mean delivering on flavor, simplicity, and heartiness it’s just perfect. This red sauce is slightly sweet with a touch of savory vibe to it, bold, and infused with green grams {aka – Ndegu – in swahili} also known as the mung beans, to add a lean source of proteins, helps with weight control, lowers blood pressure and a great source of iron.

Plus, it’s vegan /Plant based and it comes together in just 30 minutes. Shall we??

How to prep “Red sauce pasta with mung beans”

Prep time: 5 mins  Cook time: 25 mins  Total time: 30 Mins

Serves: 3 people


  • 2 tins of canned chopped tomatoes
  • 1 -1/2 cups of cooked mung beans {Ndengu}
  • 1 -1/2 cups of cooked spiral pasta
  • 1 bunch of green onions – diced
  • 3 cloves of garlic -minced
  • 1/4 cup of water
  • Grated cheddar cheese – Or any other cheese {OPTIONAL}


  • 2 Table spoons of brown sugar
  • 1 Table spoon of soy sauce – dark one
  • 1 Table spoon of smoked paprika
  • 1 – 1/2 tea spoon of salt
  • 1 tea spoon of turmeric powder
  • 1 tea spoon of black powder
  • 1/4 tea spoon of garlic powder
  • 1/4 tea spoon of ginger powder
  • Vegetable cooking oil


  1. NB: Use a large sauce pan- Sautee the green onions till they get slightly golden brown. Add in the minced garlic and mix for 1 to 2 Mins. Add in the canned tomatoes with a 1/4 cup of water mix and the spices and mix them together, then let it simmer for 10 to 15 mins while covered.{ 2 cans of tomatoes are used here since the mung beans will eventually soak up more of the sauce if only 1 can is used}

2. Make sure all the water from the sauce is no more than a fraction before adding in both the pasta and the mung beans. Mix everything together, just to warm them up.

3.Serve while still hot – don’t forget to sprinkle some grated cheddar cheese.
