Every time someone gets to mention spaghetti an automatic response of meat balls is given, then my mouth gets watery, my stomach rumbles and I get instantly hungry.
Meat balls and pasta sauce always go together since they compliment each other, but when you incorporate a vegan kind of “meat balls” and pasta sauce you wonder how that would taste. The taste is definitely different but GOOD different. Scratch that ‘its DELICIOUS”.
Making “Spaghetti with bean balls“.
prep time: 10 mins Cook time: 30 mins = 40 mins
Serves = 3 pax
INGREDIENTS-for kidney bean balls.
- 1 cup of boiled kidney beans
- 1/4 cup of bread crumbs / or Oats
- 1 Tsp of soy sauce
- 1/4 tsp of turmeric
- 1/4 tsp of black pepper
- 1/4 tsp of chili flakes
- 1/2 tsp of coriander
- 1/2 tsp of salt
- 1/2 tsp of paprika
- 1/2 tsp of cumin
INGREDIENTS – for Spaghetti sauce.
- spaghetti – boiled
- 1/2 cup of red wine {4 cousins}
- 3 cloves of garlic -minced
- 1 large onion -diced
- 1 canned of diced tomato
- 2 Tsp of sugar
- 1/4 tsp of turmeric
- 1/4 tsp of black pepper
- 1/4 tsp of chili flakes
- 1/2 tsp of coriander
- 1/2 tsp of salt
- 1/2 tsp of paprika
- 1/2 tsp of cumin
INSTRUCTIONS:
- Mash the red kidney beans till your find the right consistency -Set aside. In a non stick pan, on medium heat with a dash of vegetable oil, saute the onions first for 3 mins, add in the minced garlic for 1 min.
2. Mix the saute onion and garlic mix with the mashed beans, add in the spices and mix thoroughly. Make balls out of them – set them aside.
3. Making the spaghetti sauce: In the same pan, saute onion for 3 mins and add in the minced garlic – 1 min. After- add in the wine and let if evaporate for 30 sec, then add in the canned tomatoes, seasons it – let is simmer for 10 mins.
4. Taste and adjust the seasoning – if needed. Add in the bean balls to the sauce for 2 -4 mins to warm it up.
5. Since I was serving for one person {myself}, just put enough pasta into a sufuria /sauce pan and add the some sauce into the pasta and mix.
Serve while still hot.
Added a little green leaves of cilantro as garnish.
