Gazpacho is a Spanish soup made of a variety of different vegetables blended together and served cold. It’s best served during the hot summer. 

A dish related to gazpacho is a Salmoreja soup. It is basically a purée consisting of tomato and bread, originating from Cordoba in Andalucia, south Spain. It is made from tomatoes, bread, oil, garlic. Normally, the tomatoes are skinned and then puréed with the other ingredients. It is served as a starter or the main dish.

Just as I had mentioned on my snapchat {@chep_snaps} last night while preparing gazpacho, its the simplest way of preparing soup. All you need is a food processor or a blender, spices and various vegetables. That’s it!!.

Let’s go over the ingredients – shall we?

Making “Spanish Gazpacho”

Prep time: 5 min  Blend time: 1 min   = Total time: 6 mins

Serves: 2 pax

MAIN INGREDIENTS:

  • 3 tomatoes {roughly chopped}
  • 1 zucchini {peeled & roughly chopped
  • 2 small carrots {peeled & grated}
  • 1 bunch of fresh parsley
  • 2 cloves of garlic {minced}
  • 1 large onions – {roughly chopped}

Spices uses:

  • 3 Tablespoons of sugar
  • 1 Table spoon of vegetable oil
  • 1 -1/2 tea spoons of white vinegar
  • 1 tea spoon of paprika
  • 1 tea spoon of cumin
  • 1/4 tea spoon of ginger powder
  • 1/2 tea spoon of turmeric
  • 1 tea spoon of salt
  • 1 tea spoon of soy sauce
  • 1/4 cup of water
  • 1 bagel – Bella Luna’s Kitchen

INSTRUCTIONS:

  1. Roughly chop the vegetables and set them aside. Since my food processor is small enough to fit all the ingredients, I switched it up with a blender. FYI: It’s the same procedure as making a smoothie. Always the base has to be of a liquid. Pour in the water, then add all the ingredients into the blender + all the spices. On this stage depending on your preference, you could have it all smooth or have it with chew-able pieces in it. The latter is what I prefer. To get a chew-able texture, pulse it every 10 seconds. Some people may add in a hand full of ice cubes to add a colder texture.

2. If need be, this is the stage where you get to adjust the seasoning. Get a bowl, pour in the cold gazpacho soup – garnish with some greens {Or whatever veggies you have at hand}.
