This spicy bread omelette is not only delicious and super easy to prep, as its balanced in it own little way. If you aren’t a fan of the veggies I’ve used here, you can use any other ingredients you prefer, and make it your own. For the longest time, I’ve been loving and enjoying an egg sandwich for breakfast, the only item missing is avocado slices, trust me when I say, this is one of the best ways to enjoy an egg sandwich and let’s not forget a hot cup of white coffee. #Drool

Prep time: 5 mins  Cook time: 18 mins  Total time: 23 mins

Yields: 3 pieces

serves: 1 pax

Here’s what you’ll need:

Main Ingredients:

  • 3 slices of bread
  • 4 eggs
  • 2 bunches of cilantro leaves – chopped
  • 1 large onion – diced
  • 2 medium sized tomatoes – chopped

Spices used:

  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne chili powder
  • 1/4 teaspoon chili flakes
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon paprika
  • 1/4 teaspoon turmeric
  • vegetable cooking oil

Important tools used:

  • Flat chapati pan
  • Large + small mixing bowls
  • spoon
  • chopping board
  • knife
  • heat proof spatula
  • fork

Instructions:

Step 1:  Prep the veggie – eggs mix: – Lightly beating it together. Add in the chopped and diced mixed vegetables. Sprinkle in the mixed spices, drizzle oil and whisk everything together.

Step 2: Prep the bread:– Take each slice of bread – Dip it lightly on both sides but should be well coated with the egg mix. DO NOT SOAK IT.

Step 3: Cook them: – Am using a flat chapati /crepe pan. Over medium heat, drizzle some cooking oil to the pan. Place the lightly soaked slice of bread to the pan. Allow the bottom side to first cook for 1 min, once browned – flip it over – Using a spoon, scoop the veggie egg mix and place on top of the cooked side of the bread. As the other side is ready, gently flip the slice. It will feel slightly heavy. Cook that side for 2 mins, and top the top part with the veggie egg mix, and flip to the other side once its ready. Repeat the same to the other 2 slices of bread remaining.

Step 4: Serve while still hot.
