With numerous recipes on hash browns out there, this has got to be my favorite of all time. Grated potatoes mixed with binders such as eggs or cheese of choice and mixed spices and or plus assorted veggies, I mean what is there not to love. Unless you are on a strict diet from starchy foods, this will be your next brunch meal prep. It’s such a simple recipe that I had to squeeze in a spinach and veggie fried egg because am that extra.

Here’s what you’ll need.

Prep time: 15 mins  Cook time: 16 mins   Total time: 31 mins

Yields: 4 hash browns

Serves: 2 pax

Main Ingredients:

  • 4 medium sized potatoes – peeled and washed
  • 2 eggs
  • Spices of choice – watch video to see what I used
  • 1 teaspoon Salt
  • 3 Tablespoons of vegetable cooking oil
  • Cooked – spinach fried egg – OPTIONAL
  • Hot water
  • A dollop of plain yogurt /OR/ Sour cream – OPTIONAL

Important tools used:

  • stove
  • heat proof spatula
  • sauce pan /frying pan + a lid
  • Large mixing bowl
  • spoon
  • serving plate
  • grater

Instructions:

Step 1: Prep the potatoes – grate them, then place them in a large mixing bowl. Add in hot boiling water and let it soak/cook it for 5 mins. Drain off the soaking water and wash the grated potatoes until no more starch water is seen. Squeeze out all the water from the potatoes and place them back in the bowl. Add in the eggs, spices, 1 Tablespoon of veggie oil, salt and mix everything well with a spoon. Set it aside.

Step 2: Cook the hash browns – preheat your pan over medium heat, add cooking oil, add the potatoes a couple of spoon fulls, enough to cook two at a time. Cook each side for 4 mins, while covering the saucepan. Flip them over to cook the other side for another 4 mins. Repeat for the remaining potatoes.

Step 3: Assemble everything – Sandwich the cooked hash browns with “a made earlier – spinach veggie fried egg”, make sure to drizzle using the sauces of your choice to the egg.

Step 4: OPTIONAL STEP: – You could add a sour cream or plain yogurt as a garnish. I’m certainly using a dollop of plain yogurt on top of the sandwich. Take your for fork and knife and dig in. Bon Appetite!!
