Plant based, vegan and super healthy especially if you need a light meal to either start or end your day. My recipe is more of a replica as compared to the original dish. I got to use the ingredients at hand as compared to that of the actual recipe. In short, I got creative you should too.

Here is what I used:

Prep time: 5 mins  Cook time: 15 mins   Total time: 20 mins

Serves: 1 person

Main Ingredients:

  • 6 potatoes – peeled, washed, diced and semi -boiled
  • 2 Tablespoons of vegetable cooking oil
  • 1 large onion – thinly sliced
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of grated ginger
  • 1 large tomato diced
  • 1/2 cup of cooking cream – Bio Foods Kenya
  • 1 cup water


  • 1/2 teaspoon of salt
  • 1 teaspoon of cardamom
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon cayenne chili


Step 1: Saute 

Over medium heat, add some oil in a sauce pan. Add in the onions, and cook until they partly brown = 3 mins. In goes the ginger and garlic and cook them till they are fragrant = 1 min. Add in the tomatoes and cook till they are mushy = 2 mins while covered.

Step 2: Prep the Potatoes

Add in the semi {partly} cooked potatoes, mix them well and immediately add in a cup of water to fully cook the potatoes = 5 mins

Step 3: Prep the curry

In the mix, add in the bio foods cooking cream, mix well and cover for it to cook for 2 mins. Add in the coriander leaves to garnish and add some color.

Step 4: Serve and enjoy

Turn of heat and serve while still hot.
