Clearly I have been busy brightening up my Instagram foodie pictures since I felt they were a bit dead, but on the other hand I’ve been missing in action on this side so here is the come back post. I’ve been craving pork meat for about two weeks now, but my local butchery doesn’t have what am looking for, so I opted for easily accessible sausages for this recipe. Let’s go over the ingredients.
Making “Spicy Sausage Pasta”.
Prep time: 10 mins  Cook time: 35 mins  = 45 mins
Serves : 3 pax
MAIN INGREDIENTS:
- Pasta -a hand full
- 8 sliced sausages
- A mixture of kale and spinach {OPTIONAL}
- 2 medium sized onions -diced
- 3 cloves of garlic -minced
- 3 ripe tomatoes – diced
- Seasoning: Sunflower oil, salt, 1/2 chili beef cube, 1 tablespoon of soy sauce, a pinch of cayenne pepper, 1 tablespoon of smoked paprika, a pinch of chili flakes and 1/4 teaspoon of black pepper.
INSTRUCTIONS:
- Get a sauce pan and a non stick pan since we will start cooking the kale/spinach and the sausages separately. On medium heat, add a tablespoon of sunflower oil to the pan and a tablespoon to the saucepan, saute onions and minced garlic till slightly golden brown as well as that of the saucepan. Season with salt at this stage to hurry the sweating of the onions.
2. To the saucepan, add the veggies mix everything and then reduce the heat to low but covered for 5 mins. Add the sausages to the onion garlic mixture combine, add a little water to avoid the garlic from burning, cover for 5 mins.
3. Switch off the heat for the veggies, while covered, let it cook with the heat. In a different saucepan, boil some water on medium high heat with a tablespoon of sunflower oil and 1/2 teaspoon of salt, mix everything and cover for a more effective boil. Check on the sausages. Add the tomatoes, the seasoning, 1/4 cup of water and mix everything together. Let it simmer for 8 to 10 mins while covered.
4. After 10 mins, uncover – mix everything, taste to know if you will need to adjust the salt or pepper, if its okay… switch off heat and cover. Switch the concentration to the pasta. About 8 to 10 mins the pasta should be ready.
5. Once everything is cooked, drain the water for the pasta. Add the sausage to the pasta and mix well.
