Butternut squash are undeniably full of flavor, great for fiber and one of the many delicious comfort meals out there. It’s not only best for making soup, roasting, puree for either adults or kids food but they are also great for stuffing and that is what we will be tackling on today’s recipe. Sometimes budget meals may not scream flavorful but just one spoonful at a time is enough for you to go “mmmmmh!! Damn this is good!!”, clearly that’s the aim for this dish.
Squash is mostly best know as a side dish, but what I’ve done here is added a pack full of flavor with cooked rice / or / Left over rice works best too, cooked left over spiced minced meat from the previous meat loaf recipe then added some button mushrooms to add more flavor and all these combination makes a whole meal rather than just a side dish. Finally topped it with some parmesan cheese and garnish with green onions and mayonnaise – tomato – chili sauce.

Total time: 1 hour 5 mins
Serves: 2 pax
- 1 butternut squash – sliced in half
- 1 cup of cooked rice
- 1 cup of cooked minced meat with mushrooms
- 1/2 cup of grated parmesan cheese
- Chopped green onions – garnish
- Mayonnaise – tomato sauce – chili sauce = mixed together
- Salt + black pepper + vegetable oil
Important tools used:
- An oven
- Baking tray
- Very sharp knife
- Parchment paper
- Small serving bowls
Step 1: Preheat the oven to 220 Degrees Celsius.
Step 2: Prep the butternut squash – by massaging some oil on the fleshy part, seasoning with both salt and black pepper.
Step 3: Bake in a preheated oven for 45 mins
Step 4: Use a fork to pork and check if its cooked through. Using a spoon, scoop out most of the fleshy part, add your stuffing ie- rice + meat mix + top it up with parmesan cheese.
Step 5: Place it back to the oven to bake for 15 more mins, just until the cheese has melted.
Step 6: Garnish with chopped green onions as it cools. Serve and enjoy!
