A classic banana bread is known to be such a rich quick bread that everyone by now can make it with their eyes closed. It reaches a point, this classic recipe can get a little redundant and we cannot have that at this day and age, this is why, I get to show you  guys a different way to revamp this recipe with a little twist thanks to ” Happy cow dairy for this cream cheese”  to add a little depth to this classic.

Here’s what you’ll need:

Making ” Stuffed cheesecake banana bread”

Prep time: 20 mins  Bake time: 1 hour  Cool time: 30 mins  Total time: 1 hour 50 min

Yields: 2 loaves

Serves: 6 people

Main Ingredients:

  • 500 g of happy cow’s dairy – cream cheese (at room temp)
  • 2 eggs at room temp
  • 1 teaspoon of white vinegar
  • pinch of salt
  • 1 teaspoon of vanilla essence
  • 2 cups of icing sugar

*Tools used*

  • Electric hand mixer
  • Rubber spatula
  • Mixing bowl

*Banana batter*

  • 4 medium sized ripe bananas – Mashed
  • 2 eggs at room temp
  • 1 teaspoon vanilla essence
  • 1/2 cup of veggie oil
  • 1/2 cup of butter milk
  • 3/4 cup of granulated sugar
  • 2 cups of all-purpose flour
  • pinch of salt

*Tools Used*

  • Mixing bowls
  • Hand whisk
  • Rubber spatula
  • Electric hand mixer
  • 2 loaf tins – 9×5
  • An oven
  • A fork


Step 1: Pre-heat your oven to 190 degrees celsius.

Step 2: Prep the cream cheese mix – In a large mixing bowl, start by whisking vinegar / OR / Sour cream + vanilla + eggs together until the mixture is frothy – using an electric hand mixture. It will take at least a minute. Add in happy cow’s cream cheese. Break it down for it to be mixed it well, using a rubber spatula as shown in the video above, once done, using your electric hand mixer to mix it thoroughly. Lastly, add in the icing sugar. Start by mixing with a rubber spatula, then smooth it out using the hand mixer. Set it a side but not in the fridge.

Step 3: Prep the bananas + the batter – In a medium sized bowl, add your bananas, and starting with a fork, mash them to the consistency you fancy. Set that a side. In another large bowl, add all the wet ingredients as mentioned above, mix those together first until well combined, then in a separate bowl, mix the dry ingredients together. Add the dry to the wet and USE THE FOLD METHOD. Scoop the mixture from the bottom and over the top and repeat the steps until all the flour mix has been mixed in, then stop. Don’t over mix.

Step 4: Prepare your loaf tins – First applying margarine to the bottom and sides of each tin, then dusting it with flour and removing the excess flour by tapping the loaf pan upside down.

Step 5: Bake time – I layered between the banana bread batter and the cream cheese mix equally in each of the loaf pans. Gently give the pans a shake to make sure there aren’t any air bubbles in the mixture. Place the pans, at the center of a pre-heated oven and bake them between 50 mins to an hour or until golden brown and cooked through, by inserting a barbecue skewer at the center of the bread and when it comes out clean, its well baked. If not, add another 5 to 10 mins.

Step 6: Cooling time: = 30 mins once baked.

Step 7: Slice and serve
