I’ve been watching a lot of videos of how to make corn bread. It took me about two days to decide who’s video {other food bloggers} I will stick with. It felt like a needle in a haystack. I realized there are so many ways to prepare this dish and acquiring the same results. The measurements, ingredients used confused me, but I always had to substitute one with another.

My definition of Corn bread, in terms of texture, taste and smell.

“Let’s work with your imagination for two minutes. I believe everyone reading this has had a basic knowledge or encountered a person cooking Ugali {Kenyan Staple food}. Normally, there are only two ingredients to making Ugali -hot water and finely grounded maize flour mixed together. We are still imagining. Now, instead of the two ingredients, you get to add eggs, butter, vegetable oil, white sugar, milk, sweet corn paste and baking condiments. Mix everything together and bake it.”

Back to reality!! Once you bake the actual corn bread, the texture, smell and taste resembles Ugali but with a more sophisticated result – with a sweet smell and taste,a chewy texture and a glossing finishing. It’s just the perfect dish with some chili bean enchilada soup plus steamed veggies.

Making “Sweet Buttermilk Cornbread”.

Prep time: 30 mins   Cook time: 50 mins   = 1 hour 30 mins.

Serves: 9 Pax




  • 1 cup of corn flour
  • 1 cup of all purpose flour
  • 1/2 cup of sweet yellow corn
  • 1 cup of white sugar { 1/2 cup – Castor Sugar & 1/2 cup – Powdered Sugar}
  • 1 Tablespoon of salt
  • 1 Tablespoon of baking powder



  • 1/2 cup of melted un salted butter
  • 2/3 cup of liquid vegetable oil
  • 2 eggs – @ room temp
  • 1 cup of whole milk
  • 1 Tablespoon of white vinegar / OR/ 1 Tablespoon of fresh Lemon Juice.

Tools Needed:

  • Bowls
  • Baking dish – 8 by 8 Inch
  • Electric hand mixer
  • Food processor
  • Oven
  • Measuring cups /spoons


  1. Making the Butter Milk: – Take your milk and white vinegar Or fresh lemon juice, mix them together – Set it aside to set for 5 mins until it curdles.
  2. First mix these dry ingredients together : All purpose + corn flour + baking powder + salt. Set aside. Prep the sweet corn paste: – In a food processor, place all the sweet corn and pulse it for 3 mins. In this state, it’s mixed with the wet ingredients.


3. Mix the wet ingredients together: – melted butter + vegetable oil + eggs together using an electric hand mixer. Add in the butter milk + sweet corn paste = Pulse it till all combined.


4. Pre heat the oven to 180 degrees / 350 degrees Fahrenheit. Add the wet to the dry ingredients and electric hand mix till all the flour is covered. Don’t over mix it. A FEW LUMPS IN THE BATTER IS OKAY.


5. Grease your baking dish with either butter or non- stick cooking oil – for the bottom and the sides. Pour the batter into the baking dish. The texture of my batter –Slightly runny.

BAKE FOR 40 – 50 mins. – Or until the side get golden brown – Or when you place a BBQ stick in, it comes out clean.


Final outcome:

Cornbread is ready, but let it cool for 15 mins.


Cooked all the way through. -Yeaaay!!!
