Happy New Year Foodies.

I’m I the only person excited to be back to work?? This is totally unlike me, I never like going to work on the first day, don’t get me started with being punctual. This year I’ve decided that my actions have got to change. Starting with my punctuality like today I was at the office by 6.45 am {WORLD RECORD}, not stepping on others toes on purpose or “by accident”, all that negativity am leaving behind, and going positive in everything I do, think and say. I look at this as my “2016- resolution.

I am super pumped what this year has in store for me. New year, got a new house and a new hood which felt like I needed a new recipe too.

Making “Sweet & Sticky Chicken Drumsticks

Serves -3 pax

Prep time: 10 min, Cook time: 45 mins

Total time: 55 min {give or take}

*Main Ingredients*

  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1/4 cup  soy sauce
  • 2 garlic cloves
  • 1 cup of water
  • 1/4 tsp of chili flakes
  • 1/4 tsp of coriander powder
  • 1/2 tsp of salt
  • 1/4 tsp of paprika powder
  • 1/4 tsp of black pepper powder
  • 2 green bullet pepper
  • 6 pcs of chicken drumsticks, skin on
  • toasted sesame seeds

  1. Shallow cut the drumsticks, then Season with the ground spices, cover and leave it to sit for 5 mins.

2. In a skillet or pan, add all the ingredients {apart from the drum sticks, bullet pepper and garlic. On medium high heat, let it boil as you combine continuously for 5-10 mins.

3. Once boiled, reduce the heat to medium low, add in the drumsticks, 2 pieces of garlic, and 1 bullet pepper. cover for 15 mins.

4. After 15 mins of simmering, using tongs, turn each of them every 2 mins for the other other side to cook as well.

5. Once the chicken is slightly cooked, add another 10 mins still on low heat -until the sauce bubbles up and thickens.

6. Switch off the heat, plate the drumsticks- drizzle a spoon or two of the thick sauce, sprinkle the sesame seeds – finish with a garnish of your choice. My preference had to be –thinly diced green bullet instead of green onions.

FYI: I best believe that it should have been better is I had removed the skin, since I still removed the skin while eating. “Weird huh”.

“Don’t get rid of the remaining sauce, but store it in a mason jar, since it can still use it with any salad.”

Love and Love,
